LA SEPARACION DE LAS PARTICULAS DE PULPA DE FRUTO INSOLUBLES EN LA CENTRIFUGADORA DE TORNILLO SINFIN COMPLETAMENTE CERRADA SUCEDE INMEDIATAMENTE DESPUES DEL APLASTAMIENTO DEL FRUTO, QUE ES SEGUIDA INMEDIATAMENTE POR LA INTERACCION DE LAS ENZIMAS PECTOLITICAS DEL PROPIO FRUTO Y DE LAS OXIDASAS POLIFENOL MEDIANTE CALENTAMIENTO DEL ZUMO OBTENIDO DE LA CENTRIFUGADORA DEL TORNILLO SINFIN. ESTO HACE POSIBLE LA PRODUCCION DEL ZUMO ENTURBIADO NATURAL SIN ALTERACION ENZIMATICA DE LOS COMPONENTES DEL FRUTO PORQUE EL PROCESO DE PRENSADO SUCEDE SOLO POCOS SEGUNDOS DESPUES DE LA DESCOMPOSICION VIRTUALMENTE NO ENZIMATICA Y SIN QUE TENGA LUGAR REACCIONES DE CONVERSIONES.
