Abstract

A citrus fruit product, e.g. orange juice, is produced by comminuting whole fruit by a cutting action by which fruit sacs and oil cells are ruptured, separating the liquids and solids produced as a result of the comminution by subjecting the solids and liquids to gradually increasing pressures, free from high or pulsating pressures, and adding sugar syrup to the liquids obtained by the separation; the separation may be made by a screw feed member moving within a screen wherein the effective space between them progressively decreases along the length of the member, Fig. 4 (not shown: see Group I), by a centrifugal type separator, or by a pair of converging conveyer belts. The fruits are first pre-heated by water at 170 DEG F. for a short time to produce a temperature of the skin of the fruit on comminution of about 80 DEG F.; the comminution, which should be effected whilst maintaining the comminuted fruit out of contact with air, as by immersion in liquid or in an atmosphere of carbon dioxide or nitrogen, may be effected by rotary cutting discs employing the apparatus illustrated in Figs. 1 to 3 (not shown), forming an embodiment of the invention described and claimed in Specification 934,347, or by hammer milling. A proportion of sugar syrup may be added before, during or shortly after the comminution.
