EL PROCEDIMIENTO DE ELABORACION COMPRENDE: A). LIMPIAR LOS GARBANZOS Y MANTENERLOS EN REMOJO EL TIEMPO NECESARIO PARA QUE SE ABLANDEN; B). PELAR LOS GARBANZOS Y SOMETERLOS A UN TOSTADO UNIFORME EN CALDERA TIPO BOMBO CON YESO, PASANDOLOS NUEVAMENTE POR LA CRIBA AL TERMINAR ESTA OPERACION; C). INTRODUCIR LOS GARBANZOS EN UN BOMBO DE GRAGEAR AÑADIENDOSE A LOS MISMOS DURANTE EL MOVIMIENTO GIRATORIO UN CARAMELO FORMADO POR AZUCAR DISUELTO EN AGUA, AROMATIZANTES Y COLORANTES. D).
