PREFERIBLEMENTE, LA FERMENTACION COMPRENDE SACARIFICAR EL ALMIDON PARA FORMAR GLUCOSA POR ACCION DE AMILOGLUCOSIDASA Y PRODUCIR ETANOL A PARTIR DE LA GLUCOSA POR ACCION DE DICHA CEPA, AÑADIDA AL MEDIO DE FERMENTACION DESPUES DE LA SACARIFICACION, MANTENIENDOSE EL PH DEL MEDIO DE FERMENTACION ENTRE 3,5-7,0 Y LA TEMPERATURA DEL FERMENTADOR ENTRE 25-40JC. EL ALMIDON SE DERIVA DE CEREALES O RAICES Y EL MEDIO DE FERMENTACION INCLUYE PEPTONA, EXTRACTO DE LEVADURA, DIHIDROGENOFOSFATO POTASICO, AMONICO O SODICO, SULFATO O HIDROXIDO AMONICO, UREA, SULFATO MAGNESICO, FOSFATO DIAMONICO Y OTROS, ASI COMO SUS MEZCLAS.
