Abstract

It refers to a cooking oven (30) which comprises a compartment in which the food cooking takes place and two or more cooking planes (45) on which the foods to be cooked are put. The two or more cooking planes are arranged at different heights inside the compartment. A heat source allows the cooking of the food.

OVEN
SPECIFICATION
The present invention refers to a highly efficient multi-plane oven for the cooking of foods. The oven in question is a flame oven and/or an electric oven and/or an oven that utilizes other heating forms and its main peculiarity is the possibility of utilizing several cooking planes of which each plane can be adapted to rotate and translate in height.
More particularly, the present invention refers to a highly efficient multi- plane oven provided with more planes of which one, some or all can be adapted to rotate and can be provided with a lifting system or a combined rotating and lifting system to obtain a construction which offers a variety of performances, applications and functions for the cooking of foods including a contemporaneous cooking of foods of different kinds.
In substance, the present invention refers to a multi-plane cooking oven which functions by utilizing wood and/or gas and/or pellets, and/or electricity, with a direct flame cooking (the combustion flame is in the same cooking chamber) and in which the cooking planes are two or more than two and can be rotated and lifted.
In the various versions, the oven can have non-rotating liftable cooking planes or non-liftable rotating cooking planes or stationary cooking planes (non- rotating and non-liftable) or a combination of all of them.
In general, the present invention is applied in the sector of the cooking devices such as the cooking ovens for the cooking of both industrial and domestic foods. As has been known since ancient times, the oven has always been used to cook foods and foodstuffs of any kind.
A particular type of direct cooking-rotating oven, the so-called "up&down" oven, is known in which the plane can be lifted. Rotating ovens are known but no lifting movement is provided. These ovens work by utilizing wood, gas, pellets, electricity.
Static ovens exist and are utilized. This type of oven has a cooking chamber and a combustion chamber which are arranged on different levels. More specifically, the cooking chamber is arranged above the chamber of combustion. Since the two chambers are not in communication with each other, the food to be cooked is not in contact with the flame and is not subjected to the direct heat produced by the combustion, the cooking being thus an indirect cooking.
Examples of said ovens are represented by the old wood-burning ovens for baking bread, which are still produced, the ovens of the wood stoves with cast iron wheels, which then were changed into gas stoves and were very diffused, or the more recent wood stoves or pellets stoves which on the upper part are provided with a hot plate and take advantage of the heat of the fumes to heat the hot plate.
In all the above cases, the fire or the combustion fumes do not touch the foods to be cooked and therefore, the cooking is always indirect in said ovens.
The patent document WO2005/006814 describes an oven in which more platforms are provided. A plate, which can be a rotating plate, is arranged on each of said platforms. Accordingly, said plates can be rotating but they can not translate vertically to each other.
Likewise, the patent document DE202004006450 describes a direct cooking oven in which more rotating cooking planes and a rotating heat source are present. However in this case, the cooking planes also are not provided with controlled lifting systems, which limits the possibilities of the cooking.
The present invention proposes a multi-plane oven for a direct cooking allowing a high qualitative and quantitative efficiency in the cooking of foods.
In addition, the invention proposes a multi-plane oven for a direct cooking, its construction being comparatively simple and therefore, its production is not too expensive.
The above object is obtained through a cooking multi-plane oven which comprises a compartment in which the cooking takes place, at least two cooking planes which are put at different heights and are arranged in said compartment, and at least one heat source. The oven is characterized by the fact that at least one cooking plane is rotating and at least one cooking plane translates vertically.
Accordingly, the oven according to the present invention provides in its various embodiments that one, some or all the cooking planes can be rotating, and/or that one, some or all the cooking planes can translate vertically by means of a lifting system. Obviously, a combination of a rotating system and a lifting system is possible.
Advantageously, the cooking oven according to the invention can provide that the heat source is put in the compartment so as to carry out an oven for a direct cooking. Said heat source can be a flame generated by gas and/or wood and/or wood products.
Besides, the heat source can be fed electrically.
Advantageously, the cooking oven can comprise at least one door and at least one mouth forming the access to a compartment and comprising an upper sector and a lower sector, in which the door is shaped like an "L" and is adapted to close the lower sector of the mouth. When the door is closed, its L-shape forms a shelf acting as a plane for the access to the compartment through the upper sector of the mouth.
In addition, the cooking oven according to the invention comprises at least one lower cooking plane and at least one upper cooking plane. Besides, the cooking oven comprises at least one sheet which is arranged under the upper cooking plane so as to prevent the upper cooking plane from cooling owing to the cooking vapors coming from the foods arranged on the lower cooking plane.
Advantageously, the cooking oven is provided with at least one through- hole for the introduction of gas and/or pellets in the compartment.
In addition, auxiliary heating and irradiating electric elements or auxiliary gas burners can be provided to raise the temperature in at least one sector of the compartment.
The main advantages of the oven according to the present invention refers above all to the fact that the utilization of the multi-plane oven for a direct cooking by taking advantage of the physical capacity of the heat of going up allows to utilize cooking sectors using different temperatures for each plane and allows according to the invention to cook with different temperatures for each level.
In this way, it is possible to take advantage of the heat in the best way with a high relation between types of different foods to be cooked and heat produced.
The multi-plane oven for a direct cooking according to the present invention is formed in general by an upper body showing a hood shape or another suitable shape, in the inside of which more cooking planes are arranged on different levels.
According to the invention there are provided some versions of the oven of which the version in which at least one of the planes of the oven has the characteristic of being non-rotating but translatable vertically, and/or at least one of the planes of the oven has the characteristic of being rotating, and/or at least one of the planes of the oven has the characteristic of being both rotating and translatable vertically, and/or all the planes of the oven are not rotating, nor translatable vertically.
Further features and advantages of the invention will be better understood from the following description of an embodiment of the invention, which is given as a non-limiting example, on the base of the accompanying drawings wherein:
- Figures 1 to 5 represent an oven according to the invention of the type with a lifting system or not, and a rotating plane and one fixed plane, with a mouth and a door;
- Figures 6 and 7 are schematic views of an oven with a lifting system or not, two rotating planes, a mouth and a door;
- Figures 8 and 9 represent a door according to the invention with a lifting system, two rotating planes and an only mouth;

With reference to the accompanying drawings, and in particular to Figures 1 to 5, the oven 30 is an oven with an only rotating plane which can be adjusted in height, an only lower fixed plane, an opening or mouth 31 through which foods and/or wood are inserted, a door and opening 32 through which foods are inserted, a rotating plate indicated with 33.
On the upper part, the oven is closed by a hood 34 which rests on a support 35 which can be formed in several manners. The oven comprises a base 36 which represents the lower fixed cooking plane and is made of cement, insulator, steel, a mixed material or other and is used as a support for saucepans and foodstuffs. Besides, the oven in question comprises an andiron 37 for the combustion of wood, a brazier 38 with a possible ash discharge 39 and is carried out with a closing structure 40 for the closing of the front part of the hood where openings are obtained. Said structure 40 could be a continuation of the hood 34 and could be made of the same material or steel or other materials.
In Figure 2, number 41 denotes the conveyor for the discharge of the combustion fumes with coupling of the flue while number 42 denotes the front part of the oven showing a structure in metal and/or a refractory material and provided with a flat surface and an upper hole to convey the fumes.
Besides, the oven comprises one or more tubes or one or more through-holes 43 for the insertion of gas/pellets. In addition, the oven comprises a sheet 44 under the plate to prevent the upper cooking plane to cool owing to the cooking vapor coming from the foods arranged on the lower planes.
In Figures 6 and 7, an oven like the preceding one is represented but in this case, the oven is provided with double rotating planes 45 which are adjustable in height, a mouth 31 and a door 32. The remaining parts are substantially the same as in the preceding solution and it is possible to see how the lower rotating plane substitutes the lower supporting plane 36.
Also in this case, it is possible to see the front part of the oven 42 provided with the flat surface and the upper hole to convey the fumes, a tube or a through-hole 43 for the insertion of gas/pellets, and a sheet 44 under the plate to prevent the upper cooking plane to cool owing to the cooking vapor coming from the foods arranged in the lower planes.
In Figures 8 and 9, an oven according to a further embodiment of the invention is represented. The peculiarity of this oven is to comprise double rotating planes 45 which are adjustable in height and in this case only one mouth 31 is provided in the fore part.
In this version, it is provided that the rotating double plane can go up and down so that the food on the two planes can be inserted/taken in/from the same mouth. In Figures 11 and 12 a version is represented in which the oven is provided with a double rotating plane 45 which can be adjusted in height, and in this case it is provided the utilization of a door-flat surface 46 which is shaped like an "L" which acts also as a flat surface for the upper access mouth 31 and is carried out in such a way as to form a shelf which acts as an access plane to the upper mouth and as a closing element for the underlying opening. From the constructive point of view, the mouth/door/flat surface 46 consists of a pair of planes which are arranged like an "L", of which only the plane under the access edge of the lower plane is hinged.
It is to be noted that the door-flat surface 46 is carried out in such a way as to form a shelf for the upper access area 31 and to obtain a type of construction that allows to achieve three important advantages with the door opened in comparison with the conventional construction with the simple door 32 opened:
1 ) Less cold water goes in and therefore, the food cools less;
2) The sight of the lower compartment is better;
3) The access to the lower plane is facilitated to insert/take out the food.
The door-flat surface can translate vertically instead of being hinged, said surfaces being always turned in the same direction. In this way, the hot surface of the door is prevented from being arranged outwards in the opening position of the door. Figures 13 and 14 represent a version in which the rotating plane is a single plane like the plane 33 and the lower plane is fixed like the plane 36, Figure 1 , but in this case, an upper mouth plus door-flat surface 46 is utilized in the front part.
Figures 15 and 16 represent a version in which a rotating multiplane oven 47 is adjustable in height and has an upper opening 31 to insert the food, namely, the usual oven opening for the insertion of foods and the discharge of the combustion fumes and cooking vapors.
In the upper opening there is a door-flat surface 46 while the lower planes are provided with more doors 48 to insert foods and to permit the access to the cooking areas under the main cooking plate.
In this solution, the upper mouth is provided with a door for the "night closure" which is to be used also for all the other models and which can be provided in the front part before the hole for the discharge of fumes.
Besides, the rotating planes 47 can be stopped independently from each other. In Figures 17 and 18 it is to be noted that the lower rotating plane of the preceding version is substituted by the fixed cooking plate 36 which acts as a cooking plane apart and is utilizable in conjunction with the multiple rotating plane 47.
Finally, in Figures 19 to 22 the multiplane oven is provided only with front doors 48, in the versions without and with fixed lower cooking plate 36, respectively. In addition, it is possible the insertion in the oven of main and auxiliary heating and radiating electrical elements or main and auxiliary gas burners. All these elements provoke a possible increase of the temperature in specific areas of the oven.
All the possible combinations of doors and cooking planes can be also modular, for instance: mouth, mouth with door/doors, or all doors.
Otherwise, mouth with door/doors and door-flat surface, in conjunction with cooking planes, for instance: lifting plane, rotation plane with lifting plane, lifting plane with rotating plane/planes and stationary plane/planes, lifting plane with rotation plane and stationary plane/planes, rotating plane/planes, rotating plane/planes and fixed and/or stationary plane/planes, lifting plane, stationary plane/planes and fixed plane, or other.
The invention has been described above with reference to a preferred embodiment thereof. However, it is evident that the invention is susceptible of many variants which in their range are included in the technical equivalences.

Claims

1) Cooking oven (30) comprising:
- a compartment in which the cooking takes place;
- at least two cooking planes (45) which are arranged in the compartment at different heights;
- at least one heat source;
characterized by the fact that:
- at least one cooking plane (45) is rotating;;
- at least one cooking plane (45) is translated vertically.
2) Cooking oven (30) according to the previous claim, wherein the at least one heat source is arranged in the compartment.
3) Cooking oven (30) according to claim 2, wherein the at least one heat source is a flame.
4) Cooking oven (30) according to claim 3, wherein the flame is fed with gas and/or wood and/or wood byproducts.
5) Cooking oven (30) according to any of claims 1 to 3, wherein the at least one heat source is fed electrically.
6) Cooking oven (30) according to any of the previous claims, wherein it comprises:
- at least one opening for the access to the compartment comprising an upper sector and a lower sector;
- at least one L-shaped door (46) for the closing of the lower sector of the at least one opening so that in its closed configuration, said door forms a shelf acting as a plane for the access to the compartment through the upper sector of the at least one opening. 7) Cooking oven (30) according to any of the previous claims, wherein said at least two cooking planes (45) comprise a lower cooking plane and an upper cooking plane and wherein at least one sheet (44) is arranged under the upper cooking plane in order to prevent said upper cooking plane from cooling owing to the cooking vapor coming from the foods arranged on the lower cooking plane.
8) Cooking oven (30) according to any of the previous claims, wherein at least one through-hole (43) is obtained for the introduction of gas and/or pellets in the compartment.
9) Cooking oven (30) according to any of the previous claims, wherein auxiliary electric heating and radiating elements or auxiliary gas burners are comprised to increase the temperature in at least one sector of the compartment.
