Description

The present invention relates to a method for slicing food products, in particular for dividing stacks from individual food product slices, in which a cutting knife performs a primary movement defining a cutting plane and a product to be sliced is fed by a conveyor to the slicing knife to engage the product with the slicing knife bring to.

In the food processing industry, food products such as meat, sausage or cheese have to be cut in different ways. For example, cutting devices such as high-performance slicers serve to separate product slices with high cutting rate from a product slab or product bars. The separated individual slices can be supplied in a stacked or shingled form to a subsequent processing device, for example a packaging machine. In certain applications, it is desired to divide the product disk stacks prior to further processing, e.g. cut through in stacking direction.

In particular, in such a sharing of stacks of individual product slices, the problem is that due to an adhesion between the cutting blade surface and the product individual product slices are moved or raised and thus the predetermined shape of the stack is impaired. This problem of partial co - movement of individual product slices according to the primary movement of the product Cutting knife occurs in reinforced form when there are film or paper layers between the product slices. Even with ultrasonic cutting can undesirably move product parts.

To improve the quality of cut, the cutting knife, while engaging the product, may be temporarily moved at a speed different from the speed of the primary movement. By such a speed change during the cutting process, the effect of taking away product slices can be mitigated with the cutting blade. The speed can be changed both in terms of amount and direction.

In particular, the cutting blade can be moved about a knife axis rotating in the cutting plane, wherein, while the cutting blade is engaged with the product, the direction of rotation of the rotational movement is changed. In this embodiment, the primary movement of the cutting blade is thus a rotational movement in a primary direction of rotation. By repeatedly changing the direction of rotation, the cutting blade can be put into a torsional vibration. This is possible with relatively simple means, for example via a suitable control of a motor driving the cutting blade. The rotatable cutting blade can in this case be designed in particular as a circular blade or as a segment blade.

The EP 2 082 854 A1 discloses a cutting device in which a dough piece is delivered by means of a belt conveyor to a cutting blade which reciprocates about a rotation axis. To use a high oscillation frequency to achieve clean cuts can, the cutting blade is formed of two individual blades with intermediate spacers.

In the cutting device of JP 05023996 A A circular blade is excited by means of ultrasound to torsional vibrations in the cutting plane to avoid sticking of the crop to the blade and the production of Schnipseln.

It is an object of the invention to achieve a higher quality of cut when slicing food products and in particular to prevent unwanted co-movement of product parts with the cutting blade.

The object is achieved by a method having the features of claim 1.

According to the invention, the cutting blade is alternately rotated by a first rotation angle according to the primary movement and by a second rotation angle against the primary movement, wherein the first rotation angle is greater than the second rotation angle. Averaged over a longer period of time, the cutting blade thus performs an overall rotation in the direction of the primary movement, but recurrent phases of counter-rotation occur. The rotation angles can be selected depending on the application. It is only necessary to ensure that one edge of the cutting blade engages with the product when reversing the direction of rotation.

The cutting knife, while in engagement with the product, may be temporarily moved counter to the primary movement. By such a counter movement of the cutting blade during the cutting process Movement of a product disk is compensated for by the primary movement of the cutting blade, which improves the quality of the cut and avoids shifting or lifting product slices in a stack.

The cutting blade may also be decelerated and / or accelerated while in engagement with the product. A deceleration or acceleration can also occur in combination with a change of direction. In the sense of a continuous cutting operation, the cutting blade can in particular be alternately braked and accelerated again.

Preferably, while in engagement with the product, the cutting blade is oscillated or oscillated in the cutting plane. By means of such an oscillation movement, a particularly high quality of cut can be achieved. As an additional advantage results in a self-cleaning effect of the cutting blade. The oscillation frequency can be selected so high that a change of entrainment movement and compensation movement takes place so quickly that it remains unnoticed by the product slices substantially and product slicing motion during cutting is at least approximately completely avoided.

Preferably, the product is supplied to the cutting blade by the product is moved by means of a product conveyor in a direction parallel to the cutting plane extending conveying direction to the cutting blade. Apart from the primary movement and the movement opposite thereto, therefore, the cutting blade does not have to carry out any further proper movement since the product is delivered by means of the product conveyor to the corresponding cutting edge of the cutting blade. However, if required by the application, the cutting blade may also be in addition to the primary movement and the movement opposite thereto is moved relative to the product, ie it can be lowered for example as a rotating and / or planetary rotating circular blade on the product.

The solution of the above-mentioned object is also achieved by a device having the features of claim 5.

A device according to the invention for slicing food products, in particular for dividing stacks from individual food products, comprises a cutting knife, a drive for setting the cutting knife in a primary movement defining a cutting plane, and a conveying device for feeding a product to be cut to the cutting knife and the product engaging the cutting blade, the drive being adapted to temporarily move the cutting blade while being engaged with the product at a speed different from the speed of the primary movement, and wherein the drive is adapted to the cutting blade to rotate a blade axis in the cutting plane and, while the cutting blade is engaged with the product, to change the direction of rotation of the rotational movement.

According to the invention, the drive is further configured to rotate the cutting blade alternately by a first rotation angle in accordance with the primary movement and by a second rotation angle against the primary movement, wherein the first rotation angle is greater than the second rotation angle.

In particular, the drive may be configured to temporarily disengage the cutting blade from the primary motion while engaging the product to move. A change in the speed and in particular a change in the direction of movement can be accomplished, for example, that a motor of the drive is driven accordingly.

In particular, such a device may serve to divide a continuously conveyed stream of product stacks prior to further processing, e.g. cut into two equal halves of stacking.

The conveying direction may comprise, for example, a continuously operating product conveyor, in particular a belt or belt conveyor. The splitting of the product stacks can thus take place in a continuous process.

According to one embodiment of the invention, the primary movement is a rotational movement of the cutting blade about a knife axis. In particular, the cutting blade may be a circular blade or a segment blade. According to one embodiment of the invention, the cutting blade is a saw blade, that is, the cutting edge of the cutting blade has at least partially a toothing.

Further developments of the invention are specified in the dependent claims, the description and the accompanying drawings.

Fig. 2
shows a plan view of the device according to Fig. 1 ,

In the Fig. 1 and 2 illustrated apparatus for slicing food products comprises an endless belt conveyor 11, on which product stack 13 of individual product slices 15 rest. The product slices 15 may be, for example, sausage or cheese slices. The endless belt conveyor 11 feeds the product stacks 13 into a cutting blade 17 in a continuous flow along a conveying direction F. The illustrated device may be integrated into a larger food production plant and, in particular, be arranged downstream of a high-performance slicer which produces the individual product slices 15 by separating from a product slab or product slab. The slicing device can be arranged in particular on a depositor of a production plant.

The cutting knife 17 is considered to be one about a horizontal knife axis A ( Fig. 2 ) rotating circular blade formed and has a circumferential cutting edge 19. The cutting edge 19 defines a cutting plane S, which is perpendicular to a support surface 21 of the endless belt conveyor 11 and is arranged parallel to the conveying direction F. During the movement along the conveying direction F, the product stacks 13 reach the cutting edge 19, which according to a primary movement 25 - Fig. 1 counterclockwise - rotates, so that ultimately the cutting edge 19 cuts through the product stack 13. The product stack 13 is divided in this way into two stack halves 13A, 13B, which are conveyed by the endless belt conveyor 11 and then fed to a packaging machine which packages the two stack halves 13A, 13B together or separately.

In order to increase the quality of cut and to avoid shifting or lifting of individual product slices 15 when a product stack 13 is cut, the cutting knife 17 is moved in recurring, preferably regular, intervals into a counter-movement 27 - opposing the primary movement 25 Fig. 1 clockwise - offset. In other words, the cutting blade 17 performs a total oscillating or a circumferentially oscillating movement. Concretely, the cutting blade 17 can be rotated alternately by a first rotation angle in the direction of the primary movement 25 and by a second rotation angle in the direction of the counter-movement 27, wherein the first rotation angle is greater than the second rotation angle. Changing the direction of rotation of the cutting blade 17 can be done, for example, by means of a suitable control of a rotary drive (not shown) associated with the cutting blade 17.

By the oscillating rotational movement of the cutting blade 17, the product stack 13 can be cut particularly clean, with a displacement or lifting individual product slices 15 is avoided in that a possible entrainment is compensated directly by an opposite movement again. Preferably takes place the oscillatory motion so fast that due to inertial effects neither a driving movement nor a compensating movement of the product slices 15 can be detected.

The temporary movement of the cutting blade against the primary movement during cutting is particularly suitable for severing stacks of individual product slices - especially when they are separated by paper or film layers. In principle, however, the slicing principle according to the invention can also increase the quality of cut when slicing coherent product pieces, for example when separating product slices from a product slab. As an additional advantage results from the oscillation of the cutting blade and a self-cleaning effect.
