L'invention porte sur un système de traitement d'articles alimentaires et en particulier de poissons (10), comportant au moins deux postes de traitement (2, 4) tels que par exemple des machines d'éviscération ou de filetage de poissons (10). Le système comprend: un moyen de mesure ou de détection (20, 22) déterminant ou estimant la longueur L et le poids P ou une valeur correspondant au poids P de chaque article; un moyen de transfert d'un article, par exemple d'un poisson (10), à un poste de traitement (2, 4), par exemple une machine d'éviscération ou de filetage, en fonction d'un facteur d'état K basé sur lesdites valeurs déterminées ou estimées pour la longueur L, le poids P ou une valeur correspondant au poids P de l'article. Le poste de traitement sélectionné peut être un poste manuel (4).
