Abstract

Baking tray for double-sided use comprising a carrier having a bearing surface for the dough products on both sides and a frame surrounding the carrier and connected thereto, wherein the frame projects above and below the surface of the carrier, wherein the frame at a first side of the carrier comprises a first recess and wherein the frame at the other three sides projects above the surface of the carrier, wherein the frame at the location of the first recess has a level that is situated at the same level as or below the surface of the carrier, and wherein the frame at a second side of the carrier comprises a second recess and wherein the frame at the other three sides projects below the surface of the carrier, wherein the frame at the location of the second recess has a level that is situated at the same level as or above the surface of the carrier.

Baking tray
BACKGROUND OF THE INVENTION
The invention relates to a baking tray to be used on two sides, particularly for baking dough products. Known baking trays comprise a rectangular circumferential frame in which a carrier for dough products has been placed. Said baking tray can be flat, but also curved for instance for baking baguettes. The baking tray may be a closed piate, however a perforated carrier is also possible, optionally provided with a non-stick coating.
English patent application 2 193 626 describes a baking tray comprising a first carrier supporting a flat product and a supporting second carrier provided with cavities, wherein the first and second carrier are placed back to back against each other and wherein the first and second carrier are surrounded by a framework having a C-shaped cross-section. If so desired the first or second carrier can be used, depending on which side of the baking tray faces upwards.
A further baking tray for double-sided use having a circumferential frame is described in GB 426,979.
A drawback of the known double-sided baking trays is that the products need to be removed from the baking tray by means. This is usually done using a special device provided with a series of gripping elements for engaging onto the dough products. Examples of such gripping elements are suction cups.
The inventor thus acknowledged that there is a need for a double-sided baking tray wherein the products, particularly baked-off dough products, on the baking tray can easily be removed from the baking tray. It is an object of the invention to provide such a double-sided baking tray.
SUMMARY OF THE INVENTION
According to a first aspect the invention for that purpose provides a baking tray for double-sided use, comprising a carrier for supporting dough products and a frame surrounding the carrier and connected thereto, wherein the frame projects above and below the surface of the carrier, characterised in that the frame at a first side of the carrier comprises a first recess and wherein the frame at the other three sides projects above the surface of the carrier, wherein the frame at the location of the first recess has a level that is situated at the same level as or below the surface of the carrier, wherein the frame at a second side of the carrier comprises a second recess and wherein the frame at the other three sides projects below the surface of the carrier, wherein the frame at the location of the second recess has a level that is situated at the same level as or above the surface of the carrier or trays.
The invention thus provides a double-sided baking tray that in a very simple manner provides for the need mentioned above.
The baking tray according to the invention can be used on two sides, wherein the switch from the one to the other side takes place by simply turning the entire baking tray, a rotation of substantially 180 degrees about an axis in the plane of the baking tray. In both conditions of the baking tray the substantially circumferential edge at a side of the baking tray is provided with a recess for via said recess sliding off the dough products from the baking tray. The other three sides on each side of the carrier form an upright edge or retaining wall that prevents the dough products from sliding off along said edge.
In the first position of use the baking tray is provided at a first side with a recess in the frame, which recesses make it possible for at that location offering passage to the dough products when sliding off the dough products from the carrier. In the turned second position of use of the baking tray the frame at the location of the second recess will have a level that is situated at the same level as or below the surface of the carrier or trays. In this way the dough products are offered a second passage for sliding off the dough products from the tray in the turned condition of the baking tray.
In that case both opposite surfaces of the carrier can be adapted for supporting dough products, or the carrier can be composed from two carrier members placed back to back arranged for supporting dough products.
In one embodiment the carrier and frame can be turned as one unity to switch from using a first side of the carrier to using a second side of the carrier. The baking tray can thus in its entirety also be turned mechanically a fully automatic assembly for dough treatment.
In one embodiment the carrier is permanently connected to the frame. In that case the carrier can be connected to the frame via a screwed connection, welded joint or glued joint.
One embodiment comprises a substantially rectangular baking tray, wherein the first and second side are provided with the first and second recess, respectively, and wherein the frame at the other three sides projects above and/or below the surface of the baking tray. In that way the sliding off along another side than the first or second side can be substantially prevented.
In one embodiment the first and/or second recess extend over substantially the full length of the first side and/or second side, respectively. In that way there are substantially no obstructions along said first and/or second side that may hamper the sliding off of the dough products.
In one embodiment the recesses for the upper side of the baking tray and the recesses for the lower side of the baking tray are placed at opposite sides of the baking tray. This embodiment makes it possible that the position of the sides with recesses with respect to the dough treatment device, in which the device according to the invention is placed, is maintained when rotating the baking tray over 180 about an axis extending substantially parallel to the sides with the recesses.
In an alternative embodiment the sides of the frame with recesses for the upper and lower side, respectively, of the baking tray are situated on the same side of the device. In said embodiment the orientation of the side with recesses for sliding off the dough products here in a dough treatment machine remains substantially the same in case of a rotation of the baking tray about an axis extending substantially perpendicular to the sides with recesses.
In a further alternative embodiment the first side of the carrier is placed substantially transverse to the second side of the carrier. In this embodiment the orientation of the side with recesses for sliding off the dough products here in a dough treatment machine remains substantially the same in case of a rotation of the baking tray about an axis extending substantially diagonally over the baking tray.
Due to a suitable choice of position of the first and second sides and the axis of rotation of the baking tray, the orientation of the side with recesses for sliding off the dough products can also be chosen differently, for instance for sliding off products to different sides depending on the use of the first or second side of the carrier.
In one embodiment the carrier, at least its side, is situated at the location of the recess, at least partially abuts the frame. In one embodiment the carrier, at least its side, at the location of the recess, at least partially rests on the frame. In this way at the location of the recess an adequate support of the carrier is effected.
In one embodiment the carrier abuts the frame over substantially the full length of the recess. In one embodiment the frame at the location of the recess, substantially follows the contours of the carrier. The carrier, substantially over the full length of the recess, can be supported by the frame. The carrier can also be attached to the frame over the full length of the recess. According to a second aspect the invention provides a baking tray for double-sided use, comprising a frame and a carrier connected to the frame having a bearing surface for dough products, wherein the frame comprises substantially equal U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the frame members are placed on one another, particularly on both sides of the carrier, and wherein the arms of the first frame member, substantially over their full length, are placed adjacent to the arms of the second frame member. In one embodiment the base side of the first frame member and the base side of the second frame member can be placed at opposite sides of the baking tray. In one embodiment the base side of the first frame member and the base side of the second frame member can be placed at the same side of the baking tray.
According to a third aspect the invention provides a baking tray for double-sided use, comprising a frame and a carrier connected to the frame, the carrier having a bearing surface for dough products, wherein the frame comprises U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the base side of the first frame member substantially has the same length as an arm of the second frame member, wherein the frame members are placed on one another, in particular on both sides of the carrier, and wherein a base side of the first frame member, substantially over its full length, is placed adjacent to the arm of the second frame member.
According to a fourth aspect the invention provides a baking tray for double-sided use comprising a carrier and a frame surrounding said tray, wherein the frame for both surfaces of the carrier projects above the surface of the carrier, and wherein the frame for each side of the carrier at at least one side is provided with a recess for via said recess sliding off the baking products from the baking tray side in question.
According to a fifth aspect the invention provides a dough treatment device, particularly a baking oven, comprising one or more of the baking trays described above. According to a further aspect the invention provides a method for manufacturing a baking tray for double-sided use, comprising a frame and a carrier having a bearing surface for the dough products on both sides, wherein the frame comprises substantially equal U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the method comprises the step of: placing the first and second frame member on one another on both sides of the carrier, and wherein the arms of the first frame member, substantially over their full length, are placed adjacent to the arms of the second frame member, attaching the first frame member to the carrier and/or to the second frame member.
According to a further aspect the invention provides a method for manufacturing a baking tray for double-sided use, comprising a frame and a carrier having a bearing surface for the dough products on both sides, wherein the frame comprises U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the base side of the first frame member has substantially the same length as an arm of the second frame member, wherein the method comprises the step of: placing the first and second frame member on one another on both sides of the carrier, wherein the base side of the first frame member, substantially over its full length, is placed adjacent to the arm of the second frame member, attaching the first frame member to the carrier and/or to the second frame member.
By means of said methods a baking tray for double-sided use can easily be made using two U-shaped frame members, which in one embodiment can be substantially equal in shape and dimensions, and a carrier having a bearing surface for dough products on both sides.
The aspects and measures described in this description and the claims of the application and/or shown in the drawings of this application may where possible also be used individually. Said individual aspects may be the subject of divisional patent applications relating thereto. This particularly applies to the measures and aspects that are described per se in the sub claims.
SHORT DESCRIPTION OF THE DRAWINGS
The invention will be elucidated on the basis of a number of exemplary embodiments shown in the attached drawings, in which:
Figures 1 A, 1 B and 1 C show a schematic top-, side- and bottom view of a first exemplary embodiment of a baking tray according to the invention;
Figures 2 A, 2 B and 2C show a schematic top-, side- and bottom view of a second exemplary embodiment of a baking tray according to the invention;
Figures 3A, 3B and 3C show a schematic top-, side- and bottom view of a third exemplary embodiment of a baking tray according to the invention; and
Figures 4A, 4B and 4C show a schematic top-, side- and bottom view of a fourth exemplary embodiment having a curved carrier.
DETAILED DESCRIPTION OF THE DRAWINGS
In a first embodiment, as shown in figure 1 , the baking tray 1 comprises a frame 2, 4 and a carrier 3 for supporting dough products. The frame comprises a first frame member 2 that is substantially U- shaped and partially surrounds the upper side 31 of the rectangular tray 3, as shown in the top view of figure 1 A. The frame further comprises a second frame member 4 that is substantially U-shaped and partially surrounds the bottom side 32 of the rectangular tray 3, as shown in the bottom view of figure 1 C. The U-shaped frame members 2, 4 are substantially similar in shape and dimensions and comprise a base side 21 , 41 and two arms 22, 23, 42, 43 placed substantially transverse to the base side 21 , 41. The U-shaped frame-members are for instance made from a rectangular, particularly square, tube profile as schematically shown in the side view of figure 1 B. The frame members 2, 4 are placed on one another, in particular on both sides of the carrier 3, and attached to the carrier 3, for instance by means of welded joint, wherein the arms 22, 23 of the first frame member 2, substantially over their full length, are placed adjacent to the arms 42, 43 of the second frame member 4. In an alternative embodiment, the frame members 2, 4 can be attached to the carrier 3 via a glued joint or screwed connection. The base side 21 of the first frame member 2 and the base side 41 of the second frame member 4 are placed at opposite sides of the carrier 3.
In this way the exemplary embodiment shown in figure 1 comprises tray 3 for supporting dough products and a frame 2, 4 that at least partially surrounds the carrier. The frame 2 projects above the surface of the carrier 3 and the frame 4 also projects below the surface of the carrier 3. The upper side of the frame 2, 4 at a fist side 1 1 comprises a first recess, wherein the frame 2, 4 at the location of the first recess, has a level that is below the surface of the carrier 3, as shown in figure 1 B, wherein the carrier 3 at the location of the recess abuts the frame 4. The lower side of the frame 2, 4 at a second side 12 comprises a second recess, wherein the frame 2, 4 at the location of the second recess, is situated at a level that is above the surface of the carrier 3, wherein the carrier 3 at the location of the recess abuts below the frame 2.
In use, when the upper side 31 of the carrier 3 is used for supporting dough products, the dough products can slide off via the recess at the first side 1 1 of the baking tray 1. When the lower side 32 of the tray 3 is used for supporting dough products, the dough products can slide off via the recess at the second side 12 of the baking tray 1.
In the exemplary embodiment shown in figure 1 , the first 2 and second 4 frame members are placed with their base 21 , 41 at opposite sides 12, 1 1 of the baking tray 1.
In the second exemplary embodiment shown in figure 2, the first 20 and second 40 frame members are placed with their base 210, 410 at the same side 1 10 of the baking tray 10. As a result the recesses in the frame members 20, 40 are placed at the same side 1 10, opposite side 120, as schematically shown in the side view of figure 2B.
In the third exemplary embodiment shown in figure 3, the base 2100 of the first frame member 200 is placed on one of the arms 4300 of the second 400 frame member. As a result the recess in the frame member
200 is placed at the upper side of the carrier 3100 at a first side 1 100 of the baking tray 100, and the recess in the frame member 400 is placed at the lower side of the carrier 3200 at a second side 1200 placed transverse to the first side 1 100, as schematically shown in the side view of figure 3.
The fourth exemplary embodiment shown in figure 4 is provided with a curved carrier 7, for instance for baking baguettes. Just like the first exemplary embodiment, the baking tray 5 of this fourth exemplary embodiment comprises a frame 6, 8 and a carrier 7 for supporting dough products. The carrier 7 is provided with gutters 73.
The frame comprises a first frame member 6 that is substantially U- shaped and partially surrounds the upper side 71 of the rectangular tray
7, as shown in the top view of figure 4A. The frame further comprise a second frame member 8 that is substantially U-shaped and partially surrounds the lower side 72 of the rectangular tray 7 as shown in the bottom view of figure 3C. The U-shaped frame member 6, 8 substantially have the same shape and dimensions and comprise a base side 61 , 81 and two arms 62, 63, 82, 83 placed substantially transverse to the base side 61 , 81 .
The frame members 6, 8 are placed on one another, in particular on both sides of the carrier 7, wherein the arms 62, 63 of the first frame member 6, substantially over their full length, are placed adjacent to the arms 82, 83 of the second frame member 8. The base side 61 of the first frame member 6 and the base side 81 of the second frame member 8 are placed at opposite sides of the carrier 7. The gutters 73 are placed substantially parallel to the arms 62, 63, 82, 83.
The upper side of the frame 6, 8 comprises a first recess at a first side 51 , wherein the frame 6, 8 at the location of the first recess, has a level that is situated below the surface of the carrier 7, as shown in figure 4B, wherein the carrier 7 at the location of the recess abuts the frame 8. The base side 81 at a side facing the carrier 7, is formed with substantially the same curve as the carrier 7, so that the carrier 7 substantially over the full length first side 51 can be supported by the frame 8. Likewise the lower side of the frame 6, 8 comprises a second recess at a second side 52, wherein the frame 6, 8 at the location of the second recess, has a level that is situated above the surface of the carrier 7, wherein the carrier 7 at the location of the recess abuts below the frame 6. Also base side 61 at a side facing the carrier 7 is formed with substantially the same curve as the carrier 7, so that the carrier 7 substantially over the full length of the second side 52 can be supported by the frame 6, at least in the turned position of the baking tray 5.
When assembling the baking tray according to this exemplary embodiment, the carrier is mounted between the first and the second member of the frame. In an alternative exemplary embodiment (not shown) the first and second member of the frame can also be integrally formed. In that case the frame can comprise an aperture oriented towards the centre, for instance by forming parts of the frame with a substantially C-shaped cross-section as also already described in GB 2193626, for accommodating at least a part of the carrier therein.
Furthermore the exemplary embodiments described above, are described having a carrier 3, 30, 300, 7 that is suitable for double-sided use, for instance because the carrier is provided with a non-stick coating on both sides 31 , 32, 310, 320, 31000, 3200, 71 , 72. In an alternative exemplary embodiment (not shown) the baking tray 1 , 10, 100, 5 can also be provided with a composite carrier, for instance in the form of two first and second carrier members placed back to back against each other, optionally having different surfaces and/or surface textures for supporting different dough portions, as also already described in GB 2193626.
In a further embodiment the carrier 3, 30, 300, 7 can comprise a closed or perforated carrier (not shown), preferably made of stainless steel, and preferably provided with a non-stick coating. The above description is included to illustrate the operation of preferred embodiments of the invention and not to limit the scope of the invention.

Claims
1. Baking tray for double-sided use comprising a carrier having a bearing surface for the dough products on both sides and a frame surrounding the carrier and connected thereto, wherein the frame projects above and below the surface of the carrier, characterised in that the frame at a first side of the carrier comprises a first recess and wherein the frame at the other three sides projects above the surface of the carrier, wherein the frame at the location of the first recess, has a level that is situated at the same level as or below the surface of the carrier, and wherein the frame at a second side of the carrier comprises a second recess and wherein the frame at the other three sides projects below the surface of the carrier, wherein the frame at the location of the second recess has a level that is situated at the same level as or above the surface of the carrier.
2. Baking tray according to claim 1 , wherein the carrier and frame can be turned as one unity to switch from using a first side of the carrier to using a second side of the carrier.
3. Baking tray according to claim 1 or 2, wherein the carrier is permanently connected to the frame.
4. Baking tray according to claim 1 , 2 or 3, wherein the. first recess extends over substantially the full length of the first side.
5. Baking tray according to any one of the preceding claims, wherein the second recess extends over substantially the full length of the second side.
6. Baking tray according to any one of the preceding claims, wherein the first and second side of the carrier are placed at opposite sides of the baking tray.
7. Baking tray according to any one of the claims 1 -6, wherein the first and second side of the carrier are situated at the same side of the baking tray.
8. Baking tray according to any one of the preceding claims, wherein the first side of the carrier is placed substantially transverse to the second side of the carrier.
9. Baking tray according to any one of the preceding claims, wherein the carrier at the location of the recess, at least partially abuts the frame and/or rests on the frame.
10. Baking tray according to claim 9, wherein the carrier abuts the frame over substantially the full length of the recess or rests on the frame.
1 1. Baking tray according to claim 10, wherein the frame at the location of the recess, substantially follows the contours of the carrier.
12. Baking tray for double-sided use, comprising a frame and a carrier connected to the frame having a bearing surface for the dough products on both sides, wherein the frame comprises substantially equal U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the frame members are placed on one another, particularly on both sides of the carrier, and wherein the arms of the first frame member, substantially over their full length, are placed adjacent to the arms of the second frame member.
13. Baking tray according to claim 12, wherein the base side of the first frame member and the base side of the second frame member are placed at opposite sides of the baking tray.
14. Baking tray according to claim 12, wherein the base side of the first frame member and the base side of the second frame member are placed at the same side of the baking tray.
15. Baking tray for double-sided use, comprising a frame and a carrier connected to the frame, the carrier having a bearing surface for the dough products on both sides, wherein the frame comprises U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the base side of the first frame member substantially has the same length as an arm of the second frame member, wherein the frame members are placed on one another, in particular on both sides of the carrier, and wherein the base side of the first frame member, substantially over its full length, is placed adjacent to the arm of the second frame member.
16. Baking tray for double-sided use comprising a carrier and a frame surrounding said tray, wherein the frame for both sides of the carrier projects above the surface of the carrier, characterised in that the frame for each side of the carrier at at least one side is provided with a recess for via said recess sliding off baking products from the baking tray side in question.
17. Dough treatment device, particularly a baking oven, comprising a baking tray according to any one of the preceding claims.
18. Method for manufacturing a baking tray for double-sided use, comprising a frame and a carrier having a bearing surface for dough products on both sides, wherein the frame comprises substantially equal U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the method comprises the step of: placing the first and second frame member on one another on both sides of the carrier, and wherein the arms of the first frame member, substantially over their full length, are placed adjacent to the arms of the second frame member, attaching the first frame member to the carrier and/or the second frame member.
19. Method for manufacturing a baking tray for double-sided use, comprising a frame and a carrier having a bearing surface for dough products on both sides, wherein the frame comprises U-shaped first and second frame members, each frame member having a base side and two arms placed substantially transverse to the base side, wherein the base side of the first frame member has substantially the same length as an arm of the second frame member, wherein the method comprises the step of: placing the first and second frame member on one another on both sides of the carrier, wherein the base side of the first frame member, substantially over its full length, is placed adjacent to the arm of the second frame member, attaching the first frame member to the carrier and/or the second frame member.
20. Baking tray provided with one or more of the characterising measures described in the attached description and/or shown in the attached drawings.
21 . Dough treatment device provided with one or more of the characterising measures described in the attached description and/or shown in the attached drawings.
22. Method provided with one or more of the characterising measures described in the attached description and/or shown in the attached drawings.
