L'objectif de l'invention est de pouvoir adapter le mode d'exploitation de façon particulièrement flexible à différentes exigences, avec une grande fiabilité et une grande sécurité de fonctionnement, et de pouvoir concevoir de manière particulièrement économique les composants dudit circuit d'évaporateur (94). A cette fin, la hauteur de la colonne de liquide formée par le milieu en circulation dans les descentes (102) raccordées au tambour à vapeur (48) est contrôlée, ce qui permet de détecter et de protéger un fonctionnement à sec temporaire du circuit d'évaporateur (94).
