- 3ème JOUR : Procéder à la même opération que le deuxième jour, et donner quelques tours de manivelles pour dé stratifier les premières couches d'avec la dernière.
- A partir du 4ème JOUR, appliquer quotidiennement la même opération que le 3ème JOUR.
- Dès le 4ème JOUR, il est possible de prélever, en une ou plusieurs fois, jusqu'à un tiers du mélange obtenu pour la préparation des pâtes. On donnera quelques tours de manivelles à chaque prélèvement et à chaque ajout afin de garder l'homogénéité du levain liquide et garantir l'ensemencement du nouveau mélange.
- On notera que la couche ajoutée le deuxième jour, assurera l'étanchéité à l'air de la première couche qui aura mûri à l'air pendant 24 heures, cette deuxième couche mûrira de la même manière pendant 24 heures avant d'être recouverte à son tour par la troisième couche, et ainsi de suite. Chaque couche ajoutée sera ensemencée par la couche précédente grâce à l'organe de brassage.
