Definitions
- the invention relates to a method for machine cleaning and / or disinfecting dishes, in particular glass dishes and glasses, and the use of a specific detergent to this end.
- DIN 10511 is used for mechanical commercial glass washing a temperature of at least for hygienic reasons 55 ° C is required. This is said to be in microbiological Adequate decontamination of the glasses can be achieved.
- the invention has for its object a method of to create a simple, quick and safe cleaning of dishes, in particular Glass dishes allowed and sufficient disinfection (microbiological decontamination).
- the invention distinguishes between a cleaning agent and a cleaning solution.
- the detergent is one in the Usually liquid or solid concentrate that mixes with water ready-to-use cleaning solution is prepared. This Ready-to-use solution comes in with the dishes (dishes) Contact.
- microbicide means in the context of the invention that an invention used cleaning solution the hygienic requirements in accordance with DIN 10511, section 5.3.2.
- Dishes include those in catering and commercial catering usual everyday objects made of glass, porcelain, metal and plastic, such as glasses, mugs, cups, Plates, cutlery, pots, trays and the like.
- glasses refers to the usual drinking vessels.
- the invention has recognized that the method of the prior art Technology is disadvantageous in several ways.
- the one provided there thermal disinfection is required to heat the Water a lot of energy, and can also after the rinsing process emit unpleasant vapors from the hot machine. Which are still called after the rinsing process Glasses cannot be reused immediately, especially not for serving cold drinks.
- Chemical disinfection of the dishes is according to the invention or the glasses with benzoic acid or a microbiocidal benzoic acid derivative intended.
- microbiocidal benzoic acid derivative hydroxybenzoic acids (salicylic acid and m- and p-hydroxybenzoic acid), also halogen and / or alkyl substituted Benzoic acids, especially chlorobenzoic acids such as p-chlorobenzoic acid.
- Salicylic acid is according to the invention particularly preferred.
- the temperature of the cleaning solution during the cleaning process well below the in DIN 5511 lower 55 ° C; preferred temperature ranges are 10-50 ° C, preferably 15-45 ° C further preferably 15 - 40 ° C. It is possible to use glasses at room temperature to clean and yet adequate disinfection (microbiocidal decontamination).
- the pH of the cleaning solution is in the acidic range, preferably between 1 and 6, more preferably 2 and 5, further preferably 2 and 4.
- a likewise preferred pH range is between 1 and 3.
- the acidic pH causes that the benzoic acid or its derivatives in a technical relevant part is in undissociated form, because in this undissociated form is primarily microbiocidal is.
- Another advantage of the acidic pH is the avoidance of lime deposits on glasses or in the used Dishwasher, the machine can also be used with normal tap water instead of using costly, fully desalinated (VE) water can be fed.
- VE fully desalinated
- the duration of the cleaning step can be between 10 s and 30 min, more preferably 30 s and 10 min, more preferably 30 s to 5 min, preferably 1 to 3 min.
- a cleaning time of about 90 s is often provided.
- the rinsing step follows the cleaning step.
- the Rinse aid is used for the extensive removal of residues Cleaner solution and is said to be a quick, streak-free Allow dishes or glasses to dry. It can according to the invention either with fresh water (preferably softened or VE water), but is preferred Use of a conventional rinse aid, preferably with Fresh water is added to a rinse aid solution.
- the Rinsing can take about 5 seconds to 2 minutes, but one is common Rinse time of about 15 s is provided.
- a cleaning solution used according to the invention is usually from a cleaning agent (a concentrate) set that is preferably liquid. Are liquid concentrates easier to dose and commercial dishwashers are all around Rule set up for dosing liquid concentrates.
- a detergent concentrate used according to the invention exhibits as ingredients benzoic acid and / or a microbiocidal Benzoic acid derivative. At least is also preferred an acid and / or buffer substance to adjust an acid pH value, since benzoic acid or its derivatives in the first Line are microbiocidal in their undissociated form.
- the undissociated acid or its derivatives are only slightly water soluble; it can therefore in the formulation crystallize out as an aqueous concentrate. It is therefore preferred according to the invention, at least additionally an organic solvent for benzoic acid and / or to provide their derivatives, which is miscible with water and in Water is soluble.
- Alcohols are preferred here, in particular monohydric and dihydric alcohols.
- Glycols such as ethylene and propylene glycols, the higher of which Homologs and derivatives (e.g. diglycol ethers).
- Aprotic can also be used dipolar solvents such as DMF (dimethylformamide), DMSO (dimethyl sulfoxide) and NMP (N-methylpyrrolidone).
- Mineral acids are among the acids already mentioned (e.g. sulfuric acid, phosphoric acid, hydrochloric acid and Nitric acid) and organic acids are preferred.
- organic Acids can be used, for example, formic acid, Acetic acid, propionic acid, glycolic acid, maleic acid, Malonic acid and homologues of malonic acid (succinic acid, Adipic acid etc.).
- fruit acids such as for example citric acid, malic acid, tartaric acid and the like be used.
- a formulated as a liquid concentrate Detergents can include surfactants and others known to those skilled in the art Auxiliary substances.
- the detergent becomes a cleaning solution with water stated.
- a concentration preferably arises in this solution the benzoic acid and / or the microbiocidal benzoic acid derivative from 0.001-1% by weight, preferably 0.001-0.5 % By weight, more preferably 0.005-0.1% by weight, more preferably 0.005-0.05 wt%.
- concentrations mentioned ensure sufficient microbiocidal activity the cleaning solution even with short contact times and low temperatures from, for example, room temperature to 40 ° C.
- the process according to the invention can be carried out in the usual commercial Dishwashers are carried out.
- So-called One-tank machines are used in which the dishes remains stationary in the machine and cleaning as well Rinsing can be carried out sequentially at the same place.
- detergent solution is circulated in the tank, then rinsing is carried out by spraying on (if necessary fresh water mixed with rinse aid) from special Rinse nozzles.
- the method can also be used in so-called belt dishwashers in which the dishes are on one transport device successively different tanks, in particular a detergent tank and a rinse aid tank, passes.
- Octylpyrrolidone is a common surfactant. Butyl diglycol and Isopropanol are solubilizers for the salicylic acid, which in this concentrate remains in solution as free acid and not crystallized.
- a Winterhalter glass washer type GS 28 the tank is filled with detergent solution.
- a cleaning solution a 0.2% aqueous solution of the detergent concentrate used from Example 1.
- the temperature of the detergent solution is 40 ° C.
- Used drinking glasses become 90 s with this cleaning solution cleaned while circulating the solution.
- Rinse nozzles with rinse aid heated to 40 ° C Rinse water rinsed over the cleaned glasses.
- a typical one Rinse aid can contain 10% by weight of n-surfactant and 3% by weight of citric acid contain (rest: water) and is in a concentration of 0.5 ml / l.
- the entire program flow takes about 2 min. The glasses can then be removed from the machine taken and reused immediately.
