Definitions
- Container for uniform heating of its contents by microwave and heating installation equipped with at least one such container
- the present invention relates to a container for containing a product to be heated by application of microwaves, the container having a side wall and an end wall formed by a bottom or a cover.
- microwaves are commonly used in domestic use, to heat such a product before consumption. They are also used in the food industry, to bring the product to a temperature allowing its pasteurization or sterilization. In fact, microwaves allow an extremely rapid rise in temperature in comparison with other heating means. It is recalled that microwaves are electromagnetic waves whose frequency is between 0.3 GHz and 300 GHz, more particularly between 0.3 GHz and 5.2 GHz.
- the product contained in the container is heated as homogeneously as possible.
- the temperature differences between the different zones of this product must be extremely reduced. It is indeed necessary that the entire product is brought to a certain temperature sufficient, while avoiding that certain areas of the product are not too heated, in which case they would be denatured.
- Containers consisting of trays made of dielectric material such as polypropylene are commonly used. With such trays, it has been found that the product is heated more in the region of the edges of the tray than in its central region. The temperature difference can be of the order of 35 ° C.
- the present invention aims to improve the known containers for promoting the homogeneity of the heating of the product using microwaves.
- the present invention relates to a container intended to contain a product to be heated by application of microwaves, having a side wall and an end wall formed by a bottom or a cover, and comprising means for limiting the penetration of microwaves through the side wall.
- the container further comprises means for concentrating the microwaves in a central region of the end wall, said means being formed by an extra thickness of a dielectric material whose dielectric constant is at least equal to 1, 5, preferably greater than 2.
- the dielectric constant of the dielectric material is between 2 and 4.
- the excess thickness is made of a solid dielectric material whose dielectric constant is greater than that of air which is equal to 1.
- the presence of such an excess thickness induces locally a concentration of the microwave field. In other words, it locally increases the heating effect due to the diffusion of microwaves.
- the Applicant has found that the additional thickness defined above constitutes a particularly simple means for concentrating the microwaves in the central region of the end wall.
- the extra thickness is a local increase in the thickness of the end wall, which does not significantly modify the volume of the container.
- the product to be heated and / or pasteurized or sterilized occupies the volume of the container by being placed on or under the extra thickness (depending on whether the end wall is the bottom or the lid of the container), in the central region of the container.
- the central region of the container contains substantially the same amount of product as a container of the same shape, free of excess thickness on its end wall, and the product contained in this central region is more heated than s' it was contained in a conventional container.
- US Patent 4,416,907 is known, which describes a container, the contents of which can be heated by applying microwaves, and which comprises a side wall possibly coated with a material reflecting microwaves, as well as a bottom provided of a protuberance.
- the protuberance is transparent to microwaves, that is to say that it has a dielectric constant substantially equal to that of air, that is to say close to unity. It is therefore not a question here of concentrating the microwaves but of creating a zone transparent to microwaves.
- the protuberance has a height close to that of the tray, which significantly reduces the internal volume of the tray, unlike the extra thickness according to the invention.
- the present invention overcomes these drawbacks and presents a simple and effective solution to the problems which have just been mentioned.
- the technical effect obtained according to the invention is such that one obtains, on the edges of the container, a screen effect with respect to an amplification effect produced, meanwhile, in the central region of this container. This avoids excessive heating of the product areas close to the edges of the container, while promoting the heating of the product areas located in the central region of this container.
- the allowance in accordance with the invention commonly has a height of between approximately 2 mm and approximately 6 mm.
- the side wall comprises an electrically conductive material.
- This material partially absorbs or reflects the electric field in the region of the side wall of the container.
- the presence of such a material therefore constitutes a simple means for limiting the penetration of microwaves through this side wall.
- the container is essentially formed of a basic dielectric material to which is locally added an electrically conductive material on the side wall.
- the basic dielectric material has a dielectric constant greater than 1 and, advantageously, greater than 1.5 and even 2.
- the additional thickness can be formed from the same material. Depending on the application, the electrically conductive material can be embedded in the base dielectric material or else attached thereto. In addition, the additional thickness may be formed in one piece with the outer wall of the container or else be attached thereto.
- the ratio between the height of the additional thickness and the depth of the container is less than 0.3, preferably of the order of 0.1. This means that the extra thickness occupies only a limited height in the container, thus allowing a maximum volume of product contained in the container.
- the container can directly contain the product to be heated by microwaves or, alternatively, it can receive a package itself containing such a product.
- This packaging may be conventional and may, for example, consist of a simple conventional polypropylene tray having no particular means for distributing the penetration of the microwaves. In this case, heating the product while this packaging is in place in the container of the invention makes it possible to obtain uniform heating of the product.
- the container may constitute a utensil or part of a microwave oven, or even be integrated into the cavity of this oven, for example by being fixed to the hearth.
- the invention also applies to a heating installation by microwaves, comprising a conveyor and microwave application means capable of heating by microwaves a product transported by this conveyor.
- the conveyor is equipped with at least one container according to the invention.
- These containers can receive packaging such as trays and the like, filled with product to be heated and / or pasteurized or sterilized by microwaves.
- the installation can operate continuously or in recovery with means of manufacturing and filling the packaging.
- FIG. 2 is a top view of the container of Figure 1;
- FIG. 3 is a diagram illustrating, for different types of containers having the same dimensions, temperature measurements carried out in different zones of this container;
- FIG. 4 illustrates an application case according to which a container according to the invention is integrated in the cavity of a microwave oven
- FIG. 5 shows a container according to the invention integrated into a conveyor belt
- FIG. 6 is a section through a particular container.
- the container according to the invention has the general shape of a dish or a tray and has a side wall 10, as well as a bottom 12.
- a side wall 10 for example, as can be seen in FIG. 2, its outline, determined by the shape of the side wall is oval. It can, of course, have a different shape, for example square or rectangular with rounded corners.
- the depth of the container is generally between 30 mm and 50 mm.
- a strip 10A has been identified which, in this case, extends over the entire periphery of the side wall 10.
- This strip comprises an electrically conductive material.
- the container is formed from a dielectric material such as polypropylene or glass.
- an electrically conductive material is added to this base dielectric material.
- the electrically conductive material can be formed by a metal strip embedded in the basic dielectric material, the latter being able, for example, to be molded onto this strip.
- the electrically conductive material can also be formed by a strip which is attached, by welding, by gluing or the like, to the side wall of the container.
- the electrically conductive material can also be formed by particles (powder, ink or conductive composition, etc.) which are embedded in the basic dielectric material and concentrated in the region of the strip 10A.
- the electrically conductive material any type of material which absorbs or reflects the electric field will be chosen. It is, for example, metal, carbon or any suitable conductive composition.
- the bottom 12 of the container has an extra thickness 12A disposed in its central region. This extra thickness is made of a dielectric material which locally concentrates the microwaves and makes it possible to increase the heating effect in the central region of the container.
- the additional thickness 12A can be formed by a plate of dielectric material which is attached, for example by welding or by gluing, on the bottom of the container.
- the container being preferably made of a basic dielectric material
- the additional thickness is formed in one piece with the end wall of the container.
- this container is made by molding and its wall of dielectric material has a substantially constant thickness over its entire surface, with the exception of a central region of the end wall, in which the thickness is increased.
- the additional thickness may, as illustrated in FIG. 6, form a protuberance outside the cavity formed by the container.
- the "current" thickness of the wall of the container is of the order of 0.5 mm at
- the thickness in zone 12A is of the order of 2 to 6 mm. Furthermore, the ratio between the additional thickness 12A and the depth of the container is commonly of the order of 0.1, and preferably remains less than
- the additional thickness 12A has a rectangular shape.
- the outline of the extra thickness may be, in reduction, similar to that of the container. Thus, it can for example be oval.
- the ratio between the surface occupied by the additional thickness and the total surface of the bottom of the container is approximately 1/3.
- the ratio between the thickness and the surface of the additional thickness is between approximately 0.05 and 0.1.
- the container may include a cover formed by a simple peelable film attached to the edge 11 of its side wall 10, or by a wall element disposed across the side wall and possibly cooperating with the edge 11 of this wall by snap-fastening. or the like.
- a dielectric material belonging for example Teflon ®, mica, to samicanite or polypropylene or glass, this list not being exhaustive. These materials have in common the fact of having a dielectric constant greater than 1.5 and even 2.
- FIG. 3 shows the result of temperature measurements carried out with different containers. These containers have the overall shape of that shown in FIGS. 1 and 2.
- the different measurement points are indicated in FIG. 2 by the references X1 to X9, these points being regularly spaced and the point X5 being in the center.
- the containers were filled with 410 g of mashed potatoes. The tests were carried out for a heating time of 5 min and with microwaves with a power of 800 W.
- test No. E1 a polypropylene tray weighing 28 g was used. We see that, in the vicinity of the edges of this tray, the temperature reaches maximum values of the order of 95 to 100 ° C while, in the central region, the temperature remains of the order of 65 ° C, i.e. a temperature gradient close to 35 ° C.
- the tray had the same metal strip but, this time, a polypropylene plate of 105 mm x 50 mm and a thickness of 5 mm was glued under the underside of the tray.
- the maximum temperature reached is around 97 ° C, at point X9.
- the minimum temperature is around 85 ° C, at points X5 and X6.
- the tray was used with the same metal strip and with a samicanite plate of 105 x 50 mm and a thickness 3 mm.
- the maximum temperature reached at point X9 is around 92 ° C, while the minimum temperature reached at point X2 is around 83 ° C.
- the invention may relate to a container intended to contain directly a product to be pasteurized, sterilized or reheated. According to another application, it may also be a utensil for a microwave oven intended to contain a container such as a tray, packaging or the like itself containing directly the product to be treated.
- Figure 4 relates to an application of the invention according to which the container is integrated in a microwave oven 1. More precisely the bottom 12 of the container is part of the bottom 13 of the oven 1 or is fixed to the latter. Of course, the container has the characteristics inherent in the invention as stated above.
- a package 2, containing the product to be treated, can be placed in the container, as illustrated in this figure.
- the packaging 2 can be provided with a cover 21 when it is for example about pasteurizing the product which it contains.
- the packaging has a shape identical to that of the interior of the container in order to avoid empty volumes between these two elements.
- the form of flat-bottomed container illustrated in FIG. 6 on which the excess thickness protrudes outside the container is, as such, rather advantageous.
- the container can be part of a conveyor belt (or conveyor) 5 as illustrated in FIG. 5, in the case for example of a line for preparing food products.
- the container then forms part of an installation as illustrated diagrammatically in FIG. 5.
- the packages 2 can undergo various treatments: be filled with product, sealed by a cover (21), etc.
- each package 2 is placed in a container 10 then the assembly is brought by the conveyor belt 5 in a microwave enclosure 6 where it is subjected, for a given time, to microwave radiation. This makes it possible, as appropriate, to reheat, pasteurize or any other treatment.
- the belt 5 can run continuously or step by step in the enclosure 6. Once out of the enclosure 6, the package 2 is extracted from the container (10, 12, 12A) (manually or automatically) in order to undergo another treatment in the preparation line or to be packaged for sale.
