In the area of the food processing industry including the kitchen area for the mechanical Dishwashing more or less alkaline cleaning agent formulations used, which contain oxidizing agents in the form of peroxides or active chlorine compounds in addition to builder substances usually present. The common cleaning agents have in common that due to their alkali setting, they cause pollution of the waste water. Especially when cleaning dishes with starchy impurities, however, some highly alkaline cleaning solutions are required because the exposure times provided in modern dishwashers are very short. Nevertheless, the quality of cleaning that can be achieved with these cleaning solutions is unsatisfactory; Although it is possible to remove most of the starch-containing impurities, a thin coating of starch-containing material often remains on the dishes, which can no longer be removed by the usual dishwashing with increasing use of the dishes. This also applies to those processes in which the pre-cleaned dishes are sprayed directly with relatively high-dose alkaline cleaners, which is followed by an exposure time that can be from several seconds to several minutes. In addition, the presence of concentrated alkaline solutions in the dishwashers provided therefor poses a not inconsiderable risk potential for the operating personnel.
Accordingly, the invention is directed to a method of the type mentioned at the outset, with which impurities occurring in the kitchen, in particular starch-containing impurities, can be removed effectively without the formation of the above-mentioned deposits, although a concentrated surfactant solution is used whose pH value is used is in the weakly acidic to weakly alkaline range.
Diese Aufgabe wird erfindungsgemäß dadurch gelöst, daß man als konzentrierte Tensidlösung eine wäßrige Lösung verwendet, dieThis object is achieved in that an aqueous solution is used as the concentrated surfactant solution

The invention is explained in more detail below with the aid of a preferred exemplary embodiment.
For the implementation of the method of the invention, a Winterhalter 2-tank box transport machine of the type WKTS-PWZNT 2600 was used, which, in front of the cleaning tank, was used to hold conventional cleaning agents compatible with surfactants of the concentrated surfactant solution, with a spray device for spraying on the aqueous ones Surfactant concentrates of the invention was equipped. The water supply was carried out with softened Hamburg city water (<0.1 mmol Ca / 1). In the final stage, standard rinse aids with a concentration of 0.3 g / 1 were used; the type of rinse aid is independent of the result of the desired removal of the starch deposits.
A ceramic tableware from a canteen with starch deposits covering at least 50% of the surface was used as the wash ware; this wash ware corresponds essentially to that which is obtained after mechanical pre-cleaning of coarse contaminants by spraying with water and whose starch deposits can only be removed effectively with strongly alkaline cleaning agents in accordance with the prior art.
An aqueous surfactant concentrate with the following composition was first prepared:

1 g N-n-Octylpyrrolidon,1 g of N-n-octylpyrrolidone,
50 Kilo-Novoeinheiten pro Liter, 0,4 g Natriumbicarbonat und5 g of a commercially available aqueous solution of a mixture of amylases and proteases with an activity of 1.5 Anson units or 50 kilo-Novo units per liter, 0.4 g sodium bicarbonate and
0,1 g Natriumcarbonat,0.1 g sodium carbonate,
Vor der Beschickung in die Versuchsspülmaschine wurde dieses Konzentrat mit Wasser auf ein Gesamtvolumenverhältnis von 1000 ml verdünnt.supplemented to 100 ml volume with Hamburg city water; this concentrate was mixed with a commercially available polyacrylate disperser up to a concentration of 100 ppm and had a pH of 7.2 +/- 0.4. Before being loaded into the test dishwasher, this concentrate was diluted with water to a total volume ratio of 1000 ml.
The concentrated surfactant solution obtained in this way was sprayed onto the dishes warmed at a temperature of about 40-45 ° C. in the aforementioned test machine. After an exposure time of 15 s, "normal" rinsing was carried out with a commercially available dishwashing detergent at 60 ° C., followed by a rinse aid step with a rinse aid which is also customary.
Examination of the dishes treated in this way after starch deposits using a 0.5% iodine solution showed that the starch covers had been completely removed.
