Im Rahmen der Rationalisierung der Essenszubereitung, und zwar sowohl in Gastätten und Kantinenbetrieben als auch im Haushalt wird mehr und mehr vorbereitete Fertigfrischware angeboten, wobei das Interesse besteht, eine Frischware anzubieten, die im Ausschen und im Geschmack von Hand zubereiteten Speisen entspricht. In besonderen gilt dies auch für Teigwaren, wie Eierspätzle und ähnliche mehr oder weniger arbeitsaufwendige Teigwarengerichte. Ein besonderes Problem besteht bei derartigen Waren in der Haltbarkeit, wobei eine Verpackung benötigt wird, die einerseits das Aussehen der Ware nicht beeinflußt, die hygienisch ist und die einen Verderb der gefertigten Teigwaren, auch ohne daß die Ware tiefgekühlt wird, verhindert, die aber einfach herstellbar sein muß und hinsichtlich des Preises zum Preis der Ware selbst in einem relativ günstigen Verhältnis steht.As part of the rationalization of food preparation, both in restaurants and canteens as well as in the household, more and more prepared fresh goods are being offered, and there is interest in offering fresh goods that match hand-made dishes in taste and taste. Diese Aufgabe wird mit dem Verfahren mit den Merkmalen des Patentanspruches 1 gelöst. Vorteilhafte Weiterbildungen und Ausgestaltungen des Verfahrens ergeben sich aus den Unteransprüchen. Bei dem Verfahren nach der Erfindung wird also nicht, wie bei anderen herkönmlichen Verfahren die Ware zuerst gegart und ggf. pasteurisiert und dann getrennt verpackt, beispielsweise in Vakuum oder auch in Verbindung mit einem speziellen Inertgas, sondern bei dem Verfahren nach der Erfindung wird die verpackte Ware selbst, die vorher angekocht sein kann, einer der Ware entsprechenden mehr oder weniger langen Wärmebehandlung (Pasteurisierung) unterzogen. Um damit eine dauerhafte Ware zu bekommen, wird gem. einem Teilmerkmal der Erfindung als Verpackungsmaterial eine luftdichte, kochfeste pasteurisierfähige Folie verwendet. Dabei kommt als Folie sowohl eine Metallfolie als auch eine Kunststoffolie und im Sonderfall sogar eine Mehrschichtfolie, z. B. metallisiertes Papier in Frage, wobei die Folie insbesondere auf der nach Innen zur Ware kommenden Seite imprägniert sein kann. Dabei muß nur ein Impragnier-oder Tränkungsmittel verwendet werden, das bei der vorgesehenen Pasteurisiertemperatur nicht schmilzt oder sonstwie die verpackte Ware beeinträchtigt.This object is achieved with the method having the features of patent claim 1.
