Abstract

Предлагается способ приготовления готового к употреблению зернового или крупяного продукта. Способ включает увлажнение сырьевого продукта водой, подсушивание и термообработку. Увлажнение сырьевого продукта осуществляют водой, в которой растворен натрий двууглекислый или двууглекислый аммоний, а термообработку подсушенного сырьевого продукта осуществляют нагретым жиром с последующим его удалением. В качестве сырьевого продукта используют зерна шелушенного ячменя или крупяной продукт, например перловую крупу. Термообработку ведут преимущественно маслом растительным жирным или смесью растительных масел. Сырьевой продукт погружают в обжарочную емкость с фритюром с последующим быстрым извлечением готового к употреблению продукта. В готовый к употреблению продукт, выведенный из зоны термообработки, вносят витамины, вкусовые и обогатительные добавки, пищевые красители, после чего его охлаждают и упаковывают.A method for preparing a ready-to-eat cereal or cereal product is proposed. Vitamins, gustatory and enriching additives, food dyes are added to the ready-to-eat product, removed from the heat treatment zone, after which it is cooled and packaged.
