Abstract

The invention relates to a process for producing ready-to- eat, salted meat products with reduced water content, such as dried hams. Instead of traditional air-drying, the meat is dried under reduced pressure of preferably less than 20 hPa. The meat can be freeze-dried to the desired water content, dried in the unfrozen state (vacuum-dried) or first freeze-dried and then vacuum- dried. The drying time can be reduced by at least 40% relative to traditional air-drying of hams and the like, without any reduction in the quality of the dried products. <IMAGE>
