Claims (15)

1. Allergenfrie næringsmiddelsammensætninger, opnået ved (a) opvarme råmælk på en kendt måde, fjerne faststoffer fra den og skumme fløden, (b) underkaste den skummede mælk således opnået mikrofiltrering, (c) underkaste den fine opnåede valle som et første permeat for ultrafiltrering, (d) inddampe det andet opnåede retentat til en tør masse på fra 30 til 50 vægtprocent, (e) underkaste det resulterende valleproteinkoncentrat til mindst et hydrolysetrin i tilstedeværelse af mindst ét proteolytisk enzym, (f) underkaste det resulterende hydrolysat for varmebehandling og, endelig, (g) dehydrere slutproduktet.
2. Fremgangsmåde til fremstillingen af allergenfrie næringsmiddelsammensætninger, hvor (a) råmælk opvarmes under anvendelse afen kendt måde, faststofferne fjernes og fløden skummes, (b) den således opnåede skummede mælk underkastes mikrofiltrering, (c) den fine valle opnået som et første permeat underkastes ultrafiltrering, (d) det resulterende andet retentat indddampes til en tør masse på fra 30 til 50 vægtprocent, (e) det resulterende valleproteinkoncentrat underkastes mindst ét hydrolysetrin i tilstedeværelse af mindst ét proteolytisk enzym, (f) det resulterende hydrolysat underkastes varmebehandling og, endelig, (g) dehydreres slutproduktet.
3. Fremgangsmåden ifølge krav 2, kendetegnet ved at mikrofiltrering af den skummede mælk udføres ved hjælp af en membran med en porediameter på fra 0,1 til 0,2 pm.
4. Fremgangsmåden ifølge kravene 2 og/eller 3, kendetegnet ved at ultrafiltrering af den fine valle udføres ved en temperatur på fra 10 til 55°C.
5. Fremgangsmåden ifølge mindst ét af kravene 2 til 4, kendetegnet ved at ultrafiltrering af den fine valle udføres ved hjælp af en membran med en porediameter på fra 1000 til 50.000 Dalton.
6. Fremgangsmåden ifølge krav 5, kendetegnet ved at polymermembraner anvendes.
7. Fremgangsmåden ifølge mindst et af kravene 2 til 6, kendetegnet ved at hydrolyse udføres under anvendelse af proteolytiske enzymer, valgt fra gruppen bestående af trypsin, chymotrypsin, pankreatin, papain eller blandinger deraf.
8. Fremgangsmåden ifølge mindst et af kravene 2 til 7, kendetegnet ved at hydrolyse udføres ved temperaturer på fra 50 til 90°C.
9. Fremgangsmåden ifølge mindst et af kravene 2 til 8, kendetegnet ved at hydrolyse udføres over en tidsperiode på fra 10 minutter til 24 timer.
10. Fremgangsmåden ifølge mindst et af kravene 2 til 9, kendetegnet ved at hydrolyse udføres ved en pH-værdi på fra 6 til 8.
11. Fremgangsmåden ifølge mindst et af kravene 2 til 10, kendetegnet ved at varmebehandling udføres ved en temperatur på fra 80 til 100°C.
12. Fremgangsmåden ifølge mindst et af kravene 2 til 11, kendetegnet ved at varmebehandling udføres over en periode på fra 2 til 10 minutter.
13. Fremgangsmåden ifølge mindst et af kravene 2 til 12, kendetegnet ved at sammensætningerne dehydreres ved bæltetørring, frysetørring eller spraytørring.
14. Anvendelse af fin valle til fremstillingen af allergenfrie næringsmiddelsammensætninger ifølge fremgangsmåden af mindst et af kravene 2-13.
15. Anvendelse af fin valle til fremstillingen af allergen-fri babymad ifølge fremgangsmåden af mindst et af kravene 2-13.
