Abstract

Apparatus for storage and maturing of fresh meat under mechanical pressure with pressure-conditioned outflow of the meat juice during pressing consisting of a container (1) with an interior open at the top for receiving the meat, a lid (9), which may be inverted into the container interior (7) from above and the area of which is slightly smaller than the cross-sectional area of the container interior (7) and a pressure-application apparatus for pressing the lid (9) into the container interior, the container (1) being made of a material having such an elasticity and thermal expansion coefficient that temperature- dependent volume changes of the meat are compensated by contraction or expansion of the container (1). <IMAGE>
