Schinkenform. Bisher wurden Schinken in Formen ge sotten, welche nicht nur der Form; sondern auch der Grösse der Schinken angepasst waren. Es bedurfte somit eines Satzes Formen für die verschiedenen Grössen -der Schinken, was die Anschaffungskosten erheblich vermehrte.
Gegenstand der Erfindung ist nun eine Schinkenform, welche für alle Grössen von Schinken passt, somit nur in einem Exemplar angeschafft werden muss. Zu diesem Zweck besitzt die Schinkenform einen Hohlkörper von rechteckigem Querschnitt, einen recht eckigen Deckel und eine rechteckige P'ress- platte.
Der Hohlkörper, der Deckel und die Press- platte bestehen zweckmässig aus starkem, mit einem rostsicheren Überzug versehenen Eisen- blecb, so dass die Schinkenform dem Brechen nicht ausgesetzt ist, wie die bisher üblichen Schinkenformen aus Gnsseisen.
Die Zeichnung zeigt ein Ausführungs beispiel des Erfindungsgegenstandes durch Fig. 1 im Vertikal-Längsschnitt, und durch Fig. 2 im Horizontalschnitt nach der Linie x-x in Fig. 1; Fig. 3 ist ein Vertikal-Quer- schnitt des untern Teils der Form. 1 bezeichnet den zweckmässig aus im Feuer verzinkten, starken Eisenblech beste henden Hohlkörper der Schinkenform. Der selbe besitzt rechteckigen Querschnitt und verjüngt sich leicht nach unten, um das Her ausnehmen des Schinkens 2 zu erleichtern.
Die untern Längskanten des Hohlkörpers sind abgerundet (Fig. 3), um das Reinigen derselben zu erleichtern. Der obere Rand des Hohlkörpers 1 ist zu einer Flansche 3 um gebogen, auf welcher der ebenfalls zweck mässig aus starkem verzinkten Eisenblech be stehende Deckel 4 ruht. Derselbe besitzt eine Längsrippe 5 mit zwei Gewindelöchern 6, in welche zwei Pressschrauben 7 mit Griffringen 8 eingeschraubt sind. Löcher der Flansche 3 und solche des Deckels 4 durchziehende Schrauben 9 mit Flügelmuttern 10 pressen den Deckel 4 dicht auf die Flansche 3.
Durch die Schrauben 7 und eine in den Hohlkörper 1 der Form auf den Schinken 2 gesetzte, leicht gewölbte Pressplatte 11 aus starkem Eisen blech mit Griff 12 pressen den Schinken in den Hohlkörper 1 und bringen ihn hierdurch ebenfalls in Rechteckform, welche Form sich für den Verschnitt von Hand auf der Ma schine vorzüglich eignet. Bei kleineren Schinken, welche den Hohl körper in der Länge nicht ausfüllen, legt man ein oder mehrere schmaleBrettchen auf die eine, schmale aufrechte Wand des Hohlkörpers, wo durch der leere Raum ausgefüllt wird.
Selbst redend muss die Länge dieser Brettchen so bemessen sein, dass das Pressen des Schinkens mittelst der Platte 11 durch sie nicht gehin dert wird. Die Breite des Hohlkörpers passt für alle Schinkengrössen.
Infolge der Herstellung der gezeichneten und beschriebenen Schinkenform aus starkem Eisenblech ist diese gegen Schläge und Stösse sehr widerst.indsfähig.
Ham shape. So far, hams have been boiled in shapes that are not just the shape; but also adapted to the size of the ham. It therefore required a set of molds for the different sizes of the hams, which increased the acquisition costs considerably.
The subject of the invention is now a ham shape which fits all ham sizes and thus only has to be purchased in one copy. For this purpose, the ham shape has a hollow body with a rectangular cross section, a rectangular lid and a rectangular press plate.
The hollow body, the lid and the press plate are expediently made of strong sheet iron provided with a rustproof coating so that the ham shape is not exposed to breaking, like the hitherto customary ham shapes made of cast iron.
The drawing shows an exemplary embodiment of the subject matter of the invention through FIG. 1 in vertical longitudinal section, and through FIG. 2 in horizontal section along the line x-x in FIG. 1; Figure 3 is a vertical cross section of the lower part of the mold. 1 denotes the practically best existing hollow body of the ham shape from hot-dip galvanized, strong sheet iron. The same has a rectangular cross-section and tapers slightly downwards in order to facilitate the removal of the ham 2.
The lower longitudinal edges of the hollow body are rounded (Fig. 3) in order to facilitate cleaning of the same. The upper edge of the hollow body 1 is bent to form a flange 3 on which the cover 4 is also suitably made of strong galvanized sheet iron. The same has a longitudinal rib 5 with two threaded holes 6, into which two press screws 7 with grip rings 8 are screwed. Holes in the flanges 3 and screws 9 with wing nuts 10 pulling through the cover 4 press the cover 4 tightly onto the flanges 3.
Through the screws 7 and a set in the hollow body 1 of the mold on the ham 2, slightly curved pressing plate 11 made of strong iron sheet with handle 12 press the ham into the hollow body 1 and thereby also bring it into a rectangular shape, which shape is suitable for the offcut excellently suited by hand on the machine. In the case of smaller hams that do not fill the length of the hollow body, one or more narrow boards are placed on one, narrow, upright wall of the hollow body, where the empty space is filled.
Speaking of which, the length of these tablets must be such that the pressing of the ham by means of the plate 11 is not hindered by them. The width of the hollow body fits all ham sizes.
As the ham shape shown and described is made from strong sheet iron, it is very resistant to knocks and bumps.
