Zur Herstellung von Garnelen-Konserven ist man bisher so vorgegangen, daß die gefangenen Garnelen all Bord des Fangschiffes in kleineren Partien in Salzwasser gesiedet und nach der Anlandung in Heimarbeit geschält und dann in der Konservenfabrik mit Konservierungsmitteln versetzt werden, Worauf das so behandelte Garnelenfleisch trocken in Dosen gefüllt und im ällgememen im Wasserbad, d: h. bei einer Temperatur von ioo°, gekocht wurde. Dieses Verfahren führt nicht zu einwandfreien sterilen Konserven, und der reine Krebsgeschmack geht dabei verloren, insbesondere durch den erforderlichen . äußerordentlich hohen Zusatz von Konservierungsmitteln, nämlich Kochsalz mit etwa 4 bis 6 o/o und Borsäure mit 0,90/0. Dieser hohe, den Geschmack ungünstig beeinflussende Zusatz an Konservierungsmitteln ist erforderlich, weil beim Kochen der Garnelen an Bord der Fangschiffe das Fleisch nur Temperaturen von etwa 80 bis 900 annimmt, also nicht steril wird. Dadurch, daß das Garnelenfleisch mit dem Balsam überzogen ist, kann während der Sterilisation kein hoher Dampfdruck unmittelbar auf das Garnelenfleisch einwirken und damit etwa den Geschmack ungünstig beeinflussen. Kochen, Schälen und Konservieren unabhängig von den Gezeiten und dem damit verbundenen Anlandungszeitpunkt in die Konservenfabrik verlegt werden kann, so daß die Arbeitsgänge unmittelbar aufeinanderfolgen und damit eine nur äußerst geringe Infektion des Fleisches eintritt. Hierdurch können die Sterilisierzeiten des in Dosen gepackten Garnelenfleisches wesentlich herabgesetzt werden, und zwar gegenüber bekannten Verfahren auf etwa die halbe Zeit, so· daß man auch hohe Sterilisiertemperaturen von 106 bis 1150 anwenden kann, ohne daß das Fleisch unansehnlich wird.It was based on the knowledge that the meat of the live shrimp is not infected and that this is therefore used as the basis for processing and preservation. Diese Behälter -sind an einer Seite mit einem Verschlußdeckel versehen, so daß man sie zunächst auf die dem Deckel gegenüberliegende Seite stellt und nunmehr die Garnelen "in den Behälter einschüttet und den Deckel befestigt, worauf der Behälter um 900 gekippt wird, so daß die Garnelen in dünnen Schichten in den Behältern liegen und keinen Druck aufeinander ausüben, der zum Absterben der Garnelen führt. In diesem lebenden Zustand werden die Garnelen an Bord und auch an Land bis zum Kochen oder bis kurz vor dem Kochen in der Konservenfabrik gehalten, so daß bis. zu diesem Zeitpunkt eine Infektion nicht gegeben ist.
