Da nun die Kochtemperatur diejenige ist, wo die Nahrungsmittel durch den Einflufs der Wärme gründlich verändert werden, so giebt es einen Punkt, welcher nicht überschritten werden darf, und in dieser Hinsicht ist die Dauer der Erwärmung ein ebenso wichtiger Factor wie die Temperatur. Hieraus ergiebt sich, dafs die Wiederholung der Erwärmungen ein Zuvielkochen derNahrungs-■mittel zur Folge hat und dafs man gegenüber dem Verfahren mit dem Autoclaven, welches schneller arbeitet und auch sicherer ist, nur auf der einen Seite gewinnt, was man auf der anderen Seite verliert.According to information in the literature, attempts have been made to apply the principle of Tyηdall's method to the production of tinned foods.
