Die Beschränkung der Trocknungstemperatur andererseits stellt ein wesentliches Merkmal der
Erfindung dar. Das Fleisch weist Eiweißstoffe verschiedener Art auf, die innerhalb eines ausgedehnteren
Temperaturbereiches koagulieren. Ein Teil derselben, das Myogen-Fibrin, gerinnt spontan
schon bei etwa 400 C, während beispielsweise das Myosin bei 520 und das Myogen bei 55 bis 650 gerinnt.
Die Güte des Trockenfleisches hängt aber davon ab, daß beim Trocknungsprozeß möglichst
wenig Eiweiß koaguliert. Durch die Wahl der Trocknungstemperatur hat man es demgemäß in
der Hand, selektiv nur bestimmte Eiweißarten zum Gerinnen zu bringen und ihren Anteil sehr gering
zu halten. Bei einer Temperatur von 400 C wird z.B. nur etwa 1 % Eiweiß koagulieren, wobei diese
Menge ausreicht, die Muskelfasern zu verfilzen und zu erhärten, zumal geronnenes Eiweiß sich nicht
