Description
Method of treating beer and beer-like beverages It is known that the beer and beer-like beverages as a result of freezing or pasteurization as well as protein cloudiness caused by prolonged shaking during transport this can prevent the finished drink or an intermediate product in the course of production with aluminum silicates of the montrnorillonite type h @ acts. ' These aluminosilicates come in two different forms in nature before, namely once in the highly swellable form of bentonite (sodium bentonite) and on the other hand in the form of »non-swelling bleaching earth (calcium bentonite). In their selective action against the harmful components of beer, the Swellable bentonites are preferred, but they have the disadvantage that they are due to are difficult to deal with, especially because of their extraordinary ability to swell special measures are required to stir these types of clay into beer under pressure. In comparison to this, the non-swelling bleaching earths have a proportionate effect low effectiveness, so that much larger amounts of them are used have to.
Experiments have now shown that a special kind of on artificial Ways swellable bentonites are particularly good for introducing into beer or beer-like ones Beverages, especially under pressure, are suitable. The invention therefore proposes before, for the treatment of beer and beer-like beverages or their intermediates to the Protein stabilization swellable aluminum silicates of the montmorillonite type to use the non-swellable aluminum silicates such. B. Calcium Bentonites, by treatment with solutions of alkali salts, their anions with the polyvalent Cations of the complex occupancy form soluble compounds, with constant renewal the liquid have preferably been obtained in flow. The production takes place in ider way that z. B. calcium bentonite in pieces with appropriate Solutions, e.g. B. i- to 5o / oiger saline or sodium acetate solution, under constant Renewal is handled. Here, the mineral can be removed from the alkali salt solution in a cylinder are flowed through. The resulting disintegrated material is then kneaded, dried and crushed, whereupon determined from the crushed material Turn separated grain fractions.
These artificially swellable aluminum silicates stand out in that they swell relatively slowly in beer or the like, i.e. more easily can be stirred in, and it is easier to get out of the liquid even after the treatment let remove while they are in their selective effectiveness on the unwanted Beer components no significant differences compared to natural bentonite demonstrate.
