Diese reaktive Gruppe dürfte beim fermentativen Abbau der Eiweißstoffe eine rolle spielen. Wenn diese freien Aminogruppen ganz oder teilweise entfernt werden, so erfolgt der proteolytische Abbau wesentlich langsamer.
