Die meisten der zum Mischen und Kneten von Brotteig und ähnlichen Massen dienenden Maschinen bestehen im wesentlichen aus einem halbcylindrischen, oben offenen Behälter und den in diesem Behälter rotirenden Knetarmen. Bei vielen Maschinen, z. B. bei der Maschine System Böl and, welche im Laufe der Zeit mancherlei Abänderungen erfahren hat, wird die Teigmasse im Behälter herumgeschoben; Mischen und Kneten gehen deshalb nur sehr langsam von Statten. Diesem Uebelstande haben Waria & Pfleiderer (Patent Nr. 10164) und Carlo Sacco (Patent Nr. 56006) in verschiedener Weise abzuhelfen gesucht. Der Erfolg war auch insofern ein günstiger, als ein besseres Kneten erzielt ist. Aber um diese günstige Wirkung hervorbringen zu können, mufsten Einrichtungen getroffen werden, welche, während die Knetmaschine arbeitet, die Bewegungsrichtung des Knetwerkes umzukehren im Stande sind. Der Knetarm C fafst den von der Schraube D D1 nach aufsen geprefsten Teig, führt denselben an den Mantel B und darauf wieder in die Gänge der Schnecke D D1. In Anbetracht, dafs die Teigmassen durch die einander entgegengesetzten und sich kreuzenden Schraubenwindungen fortwährend verschoben und immer aufs Neue zerschnitten und vertheilt werden, ist die Anbringung einer Umkehrungsvorrichtung überflüssig.The kneading arm C extends with its outer edge up to the jacket B.
