der stickstoffhaltigen Substanzen und löslichen Inhaltstoffe des Fruchtwassers verlorenge`ht,

Im vorliegenden Fall ließen sich demnach
durch vorangehende Konzentrierung auf
1@=F;e vomGesamtstickstoff fast3o"/"Proteiti
mehr ausfüllen als aus Kartoffeldünnsaft.
In der Praxis arbeitet man vorzugsweise
finit einer auf etwa 15 bis 2511, Trockensub-
stanz, entsprechend etwa 1o bis 15° Be, ein-
gedickten - Lösung, rla die Abtrennung der
`iederschl@ibe aus konzentrierteren Lösungen
erschwert, aber nicht unmöglich ist.
Durch Zusatz geringer Mengen geeigneter
eiweißfällender Stoffe bei der Wärmekoägu-
lation kann die Ausbeute und-/oder die Rein-
heit der Eiweillniederschläge gesteigert wer-
(len. Beispielsweise lassen sich beim Zusatz
von Gerbsäure ini Verhältnis zu Gesamtstick-
stoff wie i : io Produkte mit über 7o"/"iger
Reinheit gewinnen, ohne daß dadurch das
Z-erliältilis von gefällter Menge Protein zti
Gesamtprotein eine Änderung erfährt.
Bei der Durchführung des Verfahrens er-
gibt sich weiterhin der besondere Vorteil,
daß die Wärmebilanz sehr viel günstiger ist
als bei der bisher üblichen Koagulation des
Eiweißes aus 1iartoffeldüniisaft. Das Ein-
dampfen des Fruchtwassers auf 15 bis 23 ")°"
Trockensubstanz führt zu Konzentraten, die
lediglich etwa 1/.; bis 174 des Volumens von
Kartoffeldünnsaft einnehmen. Die Eindainpf-
arbc#it u-ird in dem obener@rälniten 1-iiidainjif-
verfahren zur Gewinnung der übrigen Inhalt-
stof£e sowieso aufgewendet. Die Erfindung
stellt demnach einen 'Mittelweg zwischen den
leiden '\-erfahren dar und besitzt gegenüber
diesen den überraschendenVorteil derhöheren
Ausbeute an hochprozentigem Eiweiß sowie
der günstigeren Wärmebilanz.
Es konnte ferner die wichtige Erkenntnis
Wonnen werden, dali bei Durchführung der
'ärinelcoagulatioli im p11-Bereich von 3.o bis
.l.o die ausbeute an ausgefälltem Ei«-ei13 noch
weiter gesteigert «-erden kann, wenn inan
dieses durch kurzes Aufkochen oder durch
5 bis to Minuten langes Erhitzen auf g_3 bis
(,o- C koaguliert. Demgegenüber war nia:i
inl Falle des Iiartoffeldiinilsaftes bisher (leg
Ansicht, daß bei Durchführung der Wärnie-
koagulation im sauren Gebiet infolge eintre-
tender Hydrolvse bereits durch kurze: Auf-
kochen des Saftes die Ausbeute an gefälltcin
Eiweiß sinkt. Ertindungs@;emül.l wurde fest-
gestellt, daß eine teilweise Hydrolyse erst
unterhalb etwa pii 3,0 eintritt.
Zu einem Fruchtwasser aus älteren Kar-
toffeln mit einem Gehalt an Trockensubstanz
von 16,i "/" (entsprechend etwa i o = Be) und
einem Proteingehalt von 6,1 °/" wurden bei-
spielsweise verschiedene Mengen Salzsäure
bei der Wärmekoagulation liinzttgeffgt tilit

Ähnliche Verhältnisse ergaben sich bei einem
Fruchtwasser mit einem Gehalt an Trocken-
substanz von 27,2"j, (entsprechend etwa
13' Bc) und einem Proteingehalt von i0,6",/".
Erfindungsgemäß kann schließlich auch so
-,-erfahren werden, daß. \-or der Wärmekoagu-
lation bereits eine teilweise Ausfällung und
Abtrennung der Eiweillstoffe durch Einstel-
lung eines geeigneten pH-Wertes im pH Be-
reich voll 310 bis .L.o erfolgt. Auf diese '<'eise
lassen sich 30 bis 4o"/" Protein vorwegfällen,
die in verhältnismäßig niedriger Reinheit an-
fallen. Aus dem Filtrat können durch Wärme-
koagulation weitere etwa 25 bis 35 "/" 1:iweiß
von sehr hoher Reinheit ausgefällt werden.
Es lassen sich auf diese Weise ohne SchNvie-
rigkeit Produkte mit 7o bis 8o"/" Protein-
gehalt in der Trockensubstanz gewinnen.
Eine besondere Ausführungsform des Verfahrens besteht darin,- daß
man den Kartoffeldünnsaft dadurch auf die für die Koagulation erforderliche Konzentration
bringt, indem ein Teil des im Verdampfer erzeugten Konzentrats, welchem durch Hitzekoagulation
die Eiweißstoffe bereits entzogen sind, zurückgenommen und im Kreislauf geführt

ist als bei der Ausfällung aus Fruchtwasser von io' B6. Ausführungsbeispiel In beliebiger
Weise gewonnenes, weitgehend sinkstoitfreies,verdünntes oder unverdünntes Kartoffelfruchtwasser
wird zur Abtrennung von Faserteilen über ein Schüttelsieb geleitet und in einem
Verdampfer im Vakuum bei einer Heizwandtemperatur von .4o bis 50° C auf etwa io
bis 15' Be eingedampft. Das vorgewärmte Konzentrat wird, gegebenenfalls unter Zusatz
von geringen Mengen Säure und/oder eiweißfällenden Mitteln, 5 bis io Minuten lang
auf 85 bis 9o11 erhitzt, das ausgefallene Eiweiß durch Pressen oder Schleudern
abgetrennt und z. B. auf dem Walzentrockner getrocknet und gemahlen. Das Filtrat
wird weiter bis zur Sirupkonsistenz und einem Trockensubstanzgehalt von etwa 5o0(0
eingedampft und zusammen mit ZFrockenpülpe in bekannter Weise getrocknet. Das '\-erfahren

Eiweiß befreiten und eingedickten Filtrates in den Prozeß zur Vermischung mit unverdünntem
