Verfahren zur Herstellung von Kaffee-Ersatzmitteln aus Korn. Es sind
bereits eine Reihe von Kaffeeersatzmitteln aus Korn bekannt, deren Herstellung darauf
beruht, daß das Korn zunächst längere Zeit in kaltem Wasser aufgeweicht und alsdann
in größerer Wassermenge bis zum Bersten der meisten Körner gekocht bzw. mit kochendem
Wasser oder Wasserdampf überbrüht wird, um hernach getrocknet und geröstet zu werden.
-Nach diesem bekannten Verfahren wird ein Korn erhalten, welches die vermeidungswerten
Nachteile desselben, wie Geruch und Geschmack des Malzes, noch bestehen läßt, ferner

Wasser besser dem schwer zugänglichen Kern zuzuführen. Trotz dieses beabsichtigten
Berstens findet jedoch die vollkommene Durchweichung im Kern nicht statt. Durch
den übrigbleibenden mehligen Kern ist auch das Trocknen und Rösten nur ein unvollkommenes.
Das fertiggeröstete Korn zeigt daher bei den bekannten Verfahren einen verschiedenen
Röstgrad von außen nach innen. Während das Äußere überröstet ist, ist das Innere
von ganz anderer Farbe, zum ,Teil sogar noch mehlig. Eine Entfernung des malzähnlichen

jedoch vollständig aufgeschlossen wird und das Korn etwa doppelt so groß wird. Das
