Eine Probe hat beispielsweise in einem Kilo ergeben Fruchtwasser Schaum Eiweiß 11079 4,66 g Salze 0,449 1,439, das heißt also, daß sich im Schaum mehr als die vierfache Menge Eiweiß und genau die vierfache Menge Trockensubstanz von den im Fruchtwasser enthaltenen Bestandteilen befindet.
