Description
Verfahren zur Herstellung eines dem Fleischextrakt ähnlichen Produktes aus Magermilch. Es ist bekannt, daß die in der Natur vorkommenden Eiweißkörper durch Hydrolyse in Stoffe gespalten werden können, die denen sehr ähnlich sind, welche im Fleischextrakt vorkommen. Es bestehen daher auch Verfahren, nach denen man durch Hydrolysierung eiweißhaltiger Körper, so z. B. von Hefe; Leguminosen, Kasein u. a., Erzeugnisse herstellt, welche dem Fleischextrakt gleichwertig sind; hierbei werden die Eiweißkörper durch Einwirkung von Säuren bis zu den Aminosäuren abgebaut, Eine der billigsten Eiweißquellen ist die Magermilch. Man hat zwar auch schon versucht, die aus,der- Magermilch durch Erhitzen mit verdünnter Essigsäure o. dgl. erhaltenen Eiweißstoffe der Hydrolyse zu unterwerfen und aus der Molke den Milchzucker zu gewinnen. Diesem Verfahren gegenüber bietet das vorliegende Verfahren jedoch den Vorteil, daß bei ihm eine größere Ausbeute an Extrakt (hydrolysierten Eiweißstoffen) und von Milchzucker erreicht wird. Ausführungsbeispiele: i. ioo kg Trockenmagermilch werden rnit 150 1 heißem Wasser, welchem man 2 kg 25proz. Salzsäure zugesetzt hat, digeriert. Die Digestionsflüssigkeit wird von der festen Masse getrennt und diese mit einem neuen Teil Wasser von derselben Beschaffenheit hehandelt. Nachdem man auch diese Digestionsflüssigkeit entfernt hat, gibt man zu dem Rückstand etwa 30 kg a5proz. Salzsäure und erhitzt entweder im Autoklaven oder im offenen Kessel, bis der entstandene Brei bis zur Bildung von Aminosäuren hydrolysiert ist, wozu im ersten Falle etwa .f, im letzen Falle etwa io Stunden erforderlich sind.
