Description
Verfahren zur natürlichen Vitaminierunq von Mehl Im Getreidekorn sind Vitamine und auch Mineralien so ungleichmäßig verteilt, daß nur ein sehr kleiner Anteil davon bei der Vermahlung inq Mehl gelangt, wogegen der überwiegende Teil in der Kleie verbleibt und dadurch für Zwecke der menschlichen Ernährung verloren geht. So gehen-zOB. bei einem Mehlanfall von 72% etwa 80% der Vitamine Bu, B2, B, Niacin, Biotin, Inositol, Folsäure und des Provitamins Karotin in der Kleie verloren und bei Vitaminen Pantothensäure und Tokopherol liegen diese Verluste zwischen 50 bis 60%. Bei der Herstellung besonders heller Mehle mit einer Ausmahlung von 50 bis 55% betragen diese Verluste sogar bis zu 90%, Nur das Cholin ist als einziges Vitamin überwiegend auf den Mehlkörper verteilt, so daß seine Verluste beim Ausmahlen nicht berücksichtigt werden müssen Aufgabe der Erfindung ist es, ein Verfahren zu schaffen, bei dessen Anwendung die Vitamine und auch wichtige Mineralstoffe vor dem Vermahlen aus den Randschichten so weit in den Mehl körper transportiert werden, daß dadurch wenigstens in Mehlen sehr hohen Ausmahlungsgrades nahezu dieselben Vitaminmengen erreicht werden1 die sonst nur in Vollkornschroten vorkommen. Es können darüber hinaus auch solche Mehle hergestellt werden, die wesentlich mehr Vitamine enthalten, als diese im unbehandelten Vollkornschrot vorhanden waren, indem die Getreidekörner durch die Aktivierung ihrer eigenen vitaminsynthetisierenden Enzyme vorher mit allen im Getreidekorn vorkommenden Vitaminen angereichert werden, wie es beispielsweise in der DT-PS 24 20 910 beschrieben ist.
