Die Klemmhebel (2 ) werden von Hand niedergedrückt und die Frucht (1) in den Ausdrückstempel (13) eingelegt. Durch Loslassen der Klemmhebel (2) werden mittels Zugfeder (16) die Klemmhebel (2) gegen die Frucht (1) gedrückt. Die Frucht (1) wird dadurch in einer zum Schneiden günstigen Position gehalten.
