Bei der Verarbeitung des Rübensaftes wird der mit Kalk versetzte Dünnsaft zuerst mit Kohlensäure gesättigt und dann mit schwefliger Säure behandelt, unter Vermeidung des Eintritts einer sauren Reaktion der Flüssigkeit. Nach Ansicht von Geese (Centralblatt für die Zuckerindustrie, ii, 1056 und Rümpler Handbuch der Zuckerfabrikation, 1906, S. 265) bildet sich beim Saturieren mit schwefliger Säure in alkalischen Zuckerlösungen zunächst ein lösliches basisches Salz.
