Dieser modificirte Kalkzusatz ist bei Verarbeitung nicht gesunder Rüben geboten, weil in denselben die Eiweifsstoffe und die gummiartigen Stoffe durch eine Art von Gährung mehr oder weniger verändert sind. Diese Veränderung beeinflufst sowohl die Coagulation ersterer Stoffe in höherer Temperatur als auch die Beziehungen beider Gruppen von Stoffen zum Kalk.
