Claims (5)

1. Ofen (11) zum Dampfkochen von Lebensmitteln, insbesondere für den Gebrauch in Großküchen, bestehend aus:
  • - einem radialen Lüfterrad für die Umwälzung des Dampfs oder des Luft- Dampf-Gemischs in der Kochkammer, die mit der Vorderseite (13) dieses Lüfterrades verbunden ist,
  • - einem Einlass (15) zum Ansaugen von frischer Außenluft und einer Leitung (14), die diesen Einlass mit dem Bereich (17) verbindet, der hinter diesem Lüfterrad angeordnet ist, welches im Umfangsbereich mit einer Vielzahl von Schaufeln (3) und mit einer hinteren ringförmigen Oberfläche (5) versehen ist,
wobei dieses Lüfterrad ferner mit einer Vielzahl von Öffnungen (9) versehen ist, die geeignet sind, diesen Bereich (17), der hinter diesem Lüfterrad angeordnet ist, mit dem Umfangsabschnitt dieses Lüfterrades, der diese Schaufeln (3) enthält, zu ver­ binden,
dadurch gekennzeichnet, dass dieses Lüfterrad mit einer Wand (1) versehen ist, die im wesentlichen im rechten Winkel zu seiner Drehachse (X) verläuft, dass diese Wand an ihrem Umfang von einem geschlossenen Rand (6) umgrenzt wird, der mit der genannten hinteren ringförmigen Oberfläche (5) über eine Anschlussfläche (7) verbunden ist, die in der innersten Stellung, bezogen auf die hintere ringförmige O­ berfläche, angeordnet ist, dass diese Öffnungen (9) in dieser Anschlussfläche (7) an­ geordnet sind.1.
