Wenn man es sich zur Aufgabe macht, aus den Muskelfasern das Eiweiß rein zu .. gewinnen, so bildet hierbei der Umstand die größte Schwierigkeit, daß die Muskeln nicht eine homogene chemische Masse darstellen, sondern organisierte Gebilde sind. Die Muskelfaser ist immer wieder aus feineren Fäserchen zusammengesetzt, die alle der Längsrichtung nach nebeneinander liegen, so daß sich jede Faser wieder in eine große Zahl von Längsfäserchen auflösen läßt. Alle diese Fäserchen sind umhüllt von Leim oder leimgebender Substanz; das Fett sitzt in außerordentlich feinen Tröpfchen zwischen den Muskelfasern in den Spalträumen dieser leimgebenden Gewebesubstanz und dringt mit dieser zwischen die unendlich feinen Fäserchen des Muskels ein. Eine andere Art von Fett sitzt noch tiefer in der eigentlichen Substanz der Muskelfäserchen. Gerade diese Fettzumischungen sind außerordentlich schwer aus den Muskelfasern herauszuholen, weil dazu die zur Lösung bestimmte Masse durch die Leimsubstanz, die Substanz des leimgebenden Gewebes und schließlich auch noch durch die Eiweißbestandteile des Muskelfäserchens selbst dringen muß. Zur Reindarstellung des Eiweißes kommt es aber gerade darauf an, die leimgebende Gewebesubstanz, den Leim und insbesondere die angegebenen verschiedenen Arten von Fettmolekülen wegzuschaffen; denn die leimgebende Substanz und der Leim befördern die Fäulnis und verursachen einen schlechten Geschmack, während das Fett, namentlich in der feinen Verteilung, in welcher es im Muskel vorkommt, sehr geneigt ist, sich zu zersetzen und ranzig zu werden, so daß selbst die kleinsten Spuren des Fettes allmählich dem Eiweiß wieder einen unangenehmen Geschmack geben können. Endlich ist aber auch das Fett stets der Träger von Farbstoffen, von schmeckenden und riechenden Substanzen, da z. B. die Butter und anderes Fett den Geruch solcher Substanzen annehmen. Es mußte daher das Augenmerk ganz besonders auf die Entfernung des Leims, der leimgebenden Substanz und des Fettes gerichtet werden. Zur Erreichung dieses Zweckes hat es sich nun als ganz besonders vorteilhaft erwiesen, die Aufquellung mit Säuren auf das Eiweiß des Muskels anzuwenden; besonders sind Salzsäure, Schwefelsäure und alle organischen Säuren sehr geeignet, in . gewissen Verdünnungen diesen Effekt hervorzubringen, zumal bei höherer Temperatur bis zur Siedehitze. Die zur Quellung benutzte anorganische oder organische Säure darf jedoch nicht wieder durch Neutralisation abgestumpft werden, weil dadurch Fällungen der in der Säure aufgelösten Massen erfolgen; die Säure muß vielmehr allmählich abgewaschen und ausgewaschen werden.
