ist nach Ansicht der medizinischen Forschung die derzeit häufigste aller Mangelkrankheiten
(1). Da eine alimentäre Beeinflussung möglich ist, werden daher in verschiedenen
Ländern Lebensmittel mit Eisen angereichert. Die hauptsächliche Schwierigkeit einer
solchen Anreicherung liegt darin, daß praktisch die meisten Eisenverbindungen intensiv
gefärbt sind und bereits in geringen Konzentrationen diese Färbung den damit versetzten
Lebensmitteln mitteilen. Auch der katalytische Einfluß von Eisenionen auf oxidative
Vorgänge in Lebensmitteln, z. B. das Auftreten von ranzigem Geschmack in Mehl, ist
zu berücksichtigen (2). Am wenigsten wirkt in dieser Richtung das Eisen(III)-pyrophosphat,
das in reiner Form weiß ist, im Handel aber nur als gelb- bis braungefärbtes Pulver

im Laboratorium ergab, ist das erhaltene Produkt zudem nicht weiß, sondern grau
bis bräunlich und enthielt auch nach zusätzlicher Reinigung noch 270 mg S02 pro
Kilogramm. Ein solches Produkt ist für Lebensmittel nicht verwendbar, zudem - wie
unten noch gezeigt wird -im Lebensmittel eine Verfärbung eintreten kann.Therefore, a process according to US Pat. reagierenden Pyrophosphatlösungen in konzentrierter bis gesättigter Kochsalzlösung
herstellt und dieses Produkt mit mindestens 2 Teilen eines Gemisches von primärem
und sekundärem Alkaiiorthophosphat vermischt in der Art, daß eine 1 °/4ige wäßrige
Lösung des Endproduktes bei 18°C einen pH-Wert zwischen 3 und 5 aufweist. Da der
pH-Wert der Alkaliphosphate herstellungsbedingten Schwankungen unterworfen ist,
kann kein festes Mischungsverhältnis angegeben werden, der pH-Wert muß vielmehr
von Fall zu Fall eingestellt werdet. Da das reine Eisenpyrophosphat bis
280/, Fe enthalten kann, kann das Endprodukt auf Fe-Gehalte zwischen 6 und

wird dieses Salz in 1 cm hoher Schicht in einem Exsikkator über gesättigter Kochsalzlösung
als Bodenkörper gelagert. Mit der sich hierbei einstellenden relativen Luftfeuchtigkeit
von 80 °/o wird die Belastung nachgeahmt, der Speisesalz beim Transport, bei Lagerung
und Verkauf und vor allem beim Verbrauch in der Küche ausgesetzt ist. Das hier beschriebene,
mit Eisen angereicherte Salz erleidet unter diesen Bedingungen keine Veränderung
der Farbe. Demgegenüber verfärbt sich ein Speisesalz, das mit einem nach der USA:
Patentschrift 2 385 188 hergestellten Eisenpyrophosphat auf den gleichen Fe-Gehalt
angereichert wurde,

Weißbrot gebacken, so enthält dieses etwa 24 mg Fe in 100g und zeigt im Aussehen,
Geruch und Geschmack keinerlei Abweichung gegenüber einem gleichartigen Weißbrot
ohne Eisenzusatz. Das gleiche Ergebnis ließ sich bei der Herstellung von Vollkornbrot
erzielen. Durch einen Zusatz von 2 g der Eisenpyrophosphat-Natrium- j phosphat-Mischung
auf 1 kg Teig ließ sich z. B. der Normalgehalt von 2,8 mg Fe in 100 g Vollkornbrot

Eisenpyrophosphat allein, ließen im klinischen Test bei oraler Gabe keinen Anstieg
des Serumeisens erkennen. Dagegen zeigte das hier beschriebene Gemisch von Eisenpyrophosphat
mit Natriumphosphaten mit dem angegebenen pH-Bereich eine gute Resorption und einen
deutlichen Anstieg des Serumeisens unter den entsprechenden klinischen Versuchsbedingungen.A surprising finding was also made with regard to the
