Die Herstellung von künstlichen Wursthüllen aus geeignetem tierischem Material, vorzugsweise tierischer Haut, ist bekannt. Hierbei wird im allgemeinen derart verfahren, daß kollagenhaltiges Ausgangsmaterial, ζ. B. Hautstücke, in eine gequollene Fasermasse übergeführt und dieser Masse durch Ringdüsen die gewünschte Schlauchform verliehen wird. Im allgemeinen wird derart verfahren, daß Hautstücke von geeigneter Größe durch Behandlung mit quellend wirkenden Chemikalien in gequollenen Zustand übergeführt werden, die Hautstücke in diesem Zustand zerkleinert und zerfasert werden und die so erhaltene Fasermasse, wie vorstehend beschrieben, weiterverarbeitet wird. Die quellende Behandlung der Hautstücke kann z. B. derart durchgeführt werden, daß sie zunächst durch alkalische Quellung, z. B. durch Einlegen in Kalkmilch, auf einen pjj-Wert von etwa 13 gebracht, durch Auswaschen der pH-Wert auf etwa 8 erniedrigt wird und anschließend eine Säurebehandlung, vorzugsweise mit verdünnter Salzsäure, durchgeführt wird, durch welche auf einen pH-Wert von etwa 2,5 bis 4,0 eingestellt wird. Die Zerfaserung der so erhaltenen hochgequollenen Hautstücke kann z. B. derart stattfinden, daß sie zunächst auf Riffelwalzen zerquetscht werden und das so erhaltene Gut zweckmäßig mehrmals durch Lochsiebe gepreßt wird, deren Löcher Durchmesser von z. B. 1,5 und 1,0 mm aufweisen. Das so erhaltene gequollene Fasergut wird nunmehr auf einen für die Weiterverarbeitung auf Wursthüllen geeigneten Trockensubstanzgehalt, z. B. von etwa 8 bis 11%, eingestellt und diese Massen mit der Maßgabe durch Ringdüsen gepreßt, daß sie bei dem Durchgang durch den Ringspalt einerseits in die gewünschte Schlauchform übergeführt werden, während andererseits durch umlaufende Düsenteile eine teilweise Umlagerung der Fasern stattfindet, durch Verfahren zur HerstellungThe production of artificial sausage casings from suitable animal material, preferably animal skin, is known.
