PATENTSCHRIFTPATENT LETTERING
KLASSE 6: Bier, Branntwein.CLASS 6: beer, brandy.
. Patentirt im Deutschen Reiche vom 29. März 1899 ab.. Patented in the German Empire on March 29, 1899.
Besonders gilt dies für die fälschlich als »alkoholfreie Biere«. bezeichneten Getränke, die den Nährwerth der gewöhnlichen Biere besitzen, ohne die schädlichen Wirkungen des Alkohols zu zeigen.■ It has recently become of hygienic interest various types of wine and beer-like, non-alcoholic substitute drinks made and by Recommended on the medical side. This is especially true for those falsely labeled "non-alcoholic beers". designated drinks, which have the nutritional value of the ordinary Own beers without showing the harmful effects of alcohol.
These non-alcoholic beverages are presented in two main ways: either beer is brewed according to the usual method, the alcohol is distilled off, and there it is at the same time the carbonic acid escapes, this is pressed into the finished drink again. Or malt extract (or malt extract solution) is made with the addition of extracts from hops and spices impregnated with carbonic acid.
Both methods only deliver distantly similar beverages to beer as the first one Process a large part of the natural aroma of the beer escapes and the drink Has the unpleasant taste of boiled beer, while the beverage produced by the second method of exaggerated and many disgusting taste of the undead malt in which Maai'se emerges, that after a short time the drink resists the consumer.
Attempts have been made to chemically remove this disgusting taste, which in the fermentation of ordinary beer takes place, which is presumably due to oxidation processes, by using oxidation processes ; . to remove. Of course, only those substances could be considered that did not themselves bring any substances that would have an adverse effect on the taste into the drink. The following were tried: nitric acid, ozone and hydrogen peroxide. Of these, nitric acid proved to be unsuitable.Although it can be completely removed by repeated evaporation, it has a decomposing effect on the maltose (sugar acid is formed) and the malt extract has an unpleasant, pungent taste after evaporation. The well-known effect of ozone is beneficial; However, since hydrogen peroxide behaves in the same way as ozone, but its application is much more convenient, the use of H 2 O 2 , which is the subject of the patent sought, is to be preferred.
It is true that the addition of hydrogen peroxide can also be fermented and fermented Extracts not new; With the known methods, fermentation alone is done straight away those components, for example of wort, especially the carbohydrates, which I want to keep it as valuable and beneficial to health, largely destroyed.
Of the Chem. Society 73, 463), Hydrogen peroxide acts on hexoses only in the presence of iron with formation of mainly tartronic acid. On the other hand, as I have found, the maltose and dextrins accompanying, strong-tasting
H2 O2 erwiesen.Substances are destroyed, and by treating the malt extract with appropriate amounts of H 2 O, the excessively intense taste of the same can be softened at will. By boiling malt extract with 2 pCt. H n O 2 succeeds in making the malt extract almost completely tasteless, an addition of 0.3 pCt. still shows a clear effect. After numerous attempts, the most suitable addition has proven to be 0.5 to 1 pCt. H 2 O 2 proved.
H2 O2) ι Stunde stehen gelassen,
darauf V2 Stunde gekocht, vom ausgeschiedenen
1,9 ecm
Normalkaülauge verbraucht. The procedure was as follows:
100 g of commercially available malt extract, produced by evaporating pure malt extract, were dissolved in 100 g of water, with 16 ecm of a 3% hydrogen peroxide solution (- 0.5 pCt. H 2 O 2 ) left to stand for ι hour, then boiled for 2 hours, the precipitated Filtered off albumen and evaporated. In order to remove all hydrogen peroxide, the extract was redissolved in water and evaporated again. In the extract treated in this way, H 2 O 2 could no longer be detected; In contrast to the original product, it dissolved very clearly in water and had a pleasant, slightly acidic taste. The treatment with H 2 O 2 had significantly increased the free acid content. Whereas before the treatment 10 g of extract were required for neutralization 0.7 ecm of normal potassium hydroxide solution, after the treatment for neutralization of 10 g of 1.8 and 1.8 cm respectively. 1.9 ecm normal chewing liquor used up.
Treatment of malt extract with large amounts of hydrogen peroxide becomes the free acid content does not increase significantly. With this kind of oxidation formed there is also no furfural which would deteriorate the taste. Dissolved in water, with decoctions mixed with hops and the like and impregnated with carbonic acid, he delivered so treated extract a beer-like, slightly acidic drink with a pleasant taste.
Instead of the malt extract, unevaporated ones can of course also be used with the same success Treat the clarified malt extracts with the appropriate amounts of hydrogen peroxide. The hydrogen peroxide necessary to carry out this process can also be used in the malt extracts themselves from the superoxides of the alkali and alkaline earth metals and an acid.
