Abstract
Die verfügbaren und etablierten Kauknochen weisen den Nachteil auf, dass diese entweder aus unnatürlich fein gemahlenen oder zu lange eingeweichten Tierresten zusammengesetzt zu künstliche Kaueigenschaften aufweisen oder als fleischbasiertes, naturnahes Produkt zu ungleichmäßige Kaueigenschaften aufweisen. in einem Schritt b) das Zerkleinern der gefrorenen Haut zusammen mit einer geregelten Menge Trockeneis in einem Fleischwolf mit mindestens einer Förderschnecke mit eingreifender Zahnung, umfassend eine Zahnung für zähelastisches Material, wobei wiederum b1) die Temperatur durch geregelte Zugabe von Trockeneis mit einer maximalen Schwankung von +-3°C auf einen Wert im Bereich -5°C bis -10°C geregelt wurde, b2) die Haut in Fragmente zerkleinert wurde und b3) während des Zerkleinerns die Fragmente gereckt, zerrissen, komprimiert und Scherkräften ausgesetzt wurden;
der so erhaltene, strukturgebende Formfleisch-Zusatz wurde in einem weiteren Verfahrensschritt c) unterworfen, bestehend aus dem Zerkleinern der vorgereckten Fasern auf eine mittlere Maximallänge im Bereich von 0,2mm bis 8mm, bevorzugt 3 bis 5mm, über eine abflusseitig zur Zerkleinerung anschließende Extrusionsplatte mit direkt aufliegendem, drehendem Messersatz, wobei die Temperatur über eine Zugabe von Trockeneis weiterhin auf maximal -2°C begrenzt wurde.In an advantageous embodiment, the molded meat additive for chewing bones was initially obtained by a process with various process steps.
