Die Erfindung betrifft zudem die Verwendung der pektinhaltigen Apfelfaser als Verdickungs- oder Strukturmittel in verschiedenen industriellen Erzeugnissen. Weiterhin betrifft die Erfindung eine Mischung der aktivierten pektinhaltigen Apfelfaser mit einem löslichen Pektin.
