Hierdurch wird einerseits erreicht, daß die sonst so flüchtigen Aromen, etwa Himbeer- oder Erdbeeraroma, auch bei langer Lagerung ihre volle Stärke behalten. Die seither übliche Anlagerung des Aromas an kleine Zuckermengen hat nicht nur den Nachteil des Aromaschwundes, sondern führt regelmäßig auch zu Klumpenbildung. Die Benutzung der Farbgelatine andererseits führt zu einer sehr feinen Farbverteilung ohne Stippenbildung. Es können künstliche oder natürliche Farben benutzt werden, wobei im übrigen diese Methode überhaupt erst die Möglichkeit gibt, Naturfarben, z. B. Chlorophyll, in einem sauren Medium in Lösung zu halten.
