Es sind schon viele Versuche gemacht worden, Milch mit Pektin zu vermengen, doch war eine Geleebildung nicht möglich, außer wenn andere Zutaten, wie beispielsweise Agar-Agar, beigefügt werden, was dann zum Festwerden der Mischung führte. Das auf diese Weise erhaltene Gel bietet große Vorteile gegenüber jenen Gelees oder Puddings, die unter VerNvvndung von Milch und anderen Substanzen, wie Stärke oder Gelatine oder Rennin, hergestellt worden sind. Diese Beispiele sind natürlich nur zur allgemeinen Erklärung des Erfindungsgedankens gegeben worden, die angegebenen Mengen der Zutaten sowie Geschmacksarten können gemäß den individuellen Wünschen in bezug auf Geschmack und Festigkeit des Gelees nach Belieben geändert werden. Es sind ebenso gute Resultate mit Himbeer- und Vanillegeschmack usw. erzielt worden. Gleicherweise kann die Zuckermenge dem individuellen Geschmack angepaßt werden; ist kein süßer Geschmack erwünscht, so kann der Zucker auch ganz weggelassen werden. Es werden zwar vorzugsweise Pektine mit einem Verbindungsgewicht von etwa 320 verwendet, indessen ist die Verwendung nicht auf dieses Gewicht beschränkt, sondern es können alle Pektine mit einem Molekulargewicht von etwa 40o bis 2Zo zur Verwendung gelangen, die in beliebiger Weise hergestellt sein mögen, wenn sie nur die erforderlichen Eigenschaften, d. h. nur die oben angegebenen Verbindungsgewichte besitzen.These examples are of course only given to generally explain the idea of the invention, the specified amounts of ingredients and types of taste can be changed as desired according to individual requirements with regard to the taste and firmness of the jelly.
