Abstract
Die Erfindung betrifft ein Verfahren und eine Vorrichtung zur Gewinnung von Innereien aus Fischen. Anwendungsgebiet der Erfindung sind Schlachtmaschinen fuer den Bord- und Landeinsatz. Ausgehend von der Aufgabenstellung, ein Verfahren mit einer Vorrichtung zu entwickeln, welche das Freischneiden der Leber im Kopfbereich und im vorderen Rumpfteil des Fisches bei wesentlicher Senkung des Beschaedigungsgrades der Leber ermoeglicht, erfolgt erfindungsgemaess die Loesung der Aufgabenstellung durch den Transport des Fisches an der Unterseite des Kopfes und einen vom Schaedeldach ausgehenden vor dem Septum transversum bauchseitig auslaufenden Kopfschnittes. Danach wird ein Bauchschnitt entsprechend der Fleischdicke der Bauchdecke ausgefuehrt und anschliessend die Leber ausgeraeumt. In weiterer Ausbildung der Erfindung besteht die Vorrichtung aus zwischen dem Einlaufspalt eines den Fisch seitlich transportierenden Transportsystems und einem darunter angeordneten Transportband vorgesehenen Koepfmessern. Vor den Koepfmessern ist eine in Transportrichtung des Fisches in ihrem Neigungswinkel veraenderliche Rutsche vorhanden. Fig. 1 zeigt eine Seitenansicht der Vorrichtung. Verfahren und Vorrichtungen zum Ausräumen von Innereien aus Fischen in Schlachtmaschinen sind in der Fischbearbeitung umfangreich bekannt. Angewendet werden Kreismesser zum Schlitzen der Bauchhöhle in Verbindung mit nachgeschalteten Ausräumwerkzeugen. Der Beschädigungsgrad der Eingeweide ist hierbei nicht von Interesse. Soll die Leber der Fische einer weiteren Verarbeitung zugeführt werden, wird diese in der Regel von Hand entnommen. Insbesondere in der DD Patentanmeldung, Aktenzeichen WP A22 C/3098330 vom 3.12.87 mit dem Titel ,Verfahren und Vorrichtung zur Gewinnung von Innereien aus Fischen" ist eine technische Lösung beschrieben, die eine Möglichkeit der maschinellen beschädigungsarmen Entnahme der Leber und der Rogensäcke gestattet. Bei diesem Verfahren wird ein Bauchschnitt kurz hinter dem Unterkiefer beginnend bis zur Anale als Keilschnitt ausgeführt. In weiterer Ausbildung der Erfindung liegt der Fisch kopfseitig auf einem Transportmittel auf und wird an seinem Unterkiefer transportiert. Der Kopfschnitt entspricht dabei einem S-förmigen Verlauf. Beim weiteren Transport des Fisches 12 lenkt der Fischkopf den Anwesenheitstaster 5 aus und ein Schaltimpuls wird erzeugt. Die Eingaberutsche 1 schwenkt über den Arbeitszylinder 10 gegen den Einlaufspalt 11. Dadurch nimmt der Fisch 12 am Ende des Kopfschnittes einen steileren Köpfwinkel 14 ein, der etwa dem Eingabewinkel entspricht. Der Rumpf des Fisches wird von den Förderern 2,2' erfaßt, der Fisch 12 in dieser Stellung aus der Eingaberutsche 1 entnommen und der Kopfschnitt beendet. Dieser verläuft somit wiederum steiler und tritt vor dem Septum transversum bauchseitig aus dem Kopf des Fisches aus. Damit sind Teile des Schädeldaches, der Kiemenbögen, der Kiemendeckel und der Kragenknochen vom übrigen Kopf getrennt und die Leber ist kopfseitig freigeschnitten. Beim weiteren Transport des Fisches 12 läuft dieser mit seinem Rücken gegen die Richtrolle 9 und wird in Schwimmlage gedreht. Danach erfolgt der Bauchschnitt bis zur Anale des Fisches.
