Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung und Stabilisierung von Lebensmittel-Emulsionen und -Schaeumen durch Emulgieren oder Verschaeumen von Lebensmittelzubereitungen unter Zusatz von Kombinatsprodukten verschiedenartiger Proteinfraktionen aus Leguminosensamen und ihren Verarbeitungsprodukten. Diese Kombinationsprodukte sind besonders fuer energiereduzierte physikalisch stabile Emulsionen und Schaeume, aber auch fuer Lebensmittelzubereitungen mit traditioneller Zusammensetzung geeignet. Erfindungsgemaess werden zur Stabilisierung von Lebensmittel-Emulsionen oder -Schaeumen ober- bzw. grenzflaechenaktive Kombinationsprodukte aus der nativen 7-S-Proteinfraktion und der thermisch denaturierten 11-S-Proteinfraktion von Leguminosensamen in einem vorgegebenen Verhaeltnis eingesetzt. Demgegenüber sind die Einsatzkonzentrationen der Kombinationsprodukte als weniger kritisch anzusehen; sie liegen in Größenordnungen anderer Lebensmittelzusatzstoffe und betragen bei Lebensmittel-Emulsionen 0,5 bis 5Ma.-%, vorzugsweise 1 bis 2 Ma.-% und bei Lebensmittel-Schäumen 2 bis 20 Ma.-%, vorzugsweise 5 bis 15 Ma.-%, wobei im Falle energiereduzierter Zubereitungen Zusatzmengen im oberen Grenzbereich vorteilhaft sind.
