Abstract
Ziel der Erfindung ist die Bereitstellung eines verbesserten Verfahrens, mit dem auf einfache Weise ein Produkt mit hohem Naehrwert und hohen Geschmacks- und Heileigenschaften hergestellt werden kann und das als Nahrungs- und Futtermittel sowie als pharmazeutisches oder kosmetisches Mittel verwendet werden kann. Erfindungsgemaess werden dem frisch aus den Gefaessen entfernten Schlachttierblut Salze von alkalischen Metallen, vorzugsweise Natrium- oder Kaliumchloride, in einer Menge zugesetzt, die eine Elektrolytkonzentration in den Grenzen von 0,085 bis 0,43 mol/l ergibt, was einer Konzentration von 0,5 bis 2,5 Masseprozent Natriumchlorid entspricht. Das Gemisch wird bis zur Produkterstarrung stehengelassen. Danach wird das Produkt einer thermischen Haertung unterzogen. Ganz unerwartet wurde es festgestellt, daß durch die Auswahl von einem bestimmten Konzentrationsbereich an alkalischen Metallen im Blut und die dadurch erhaltene Kationenanzahl, eine Modifikationsmöglichkeit des typischen Erstarrungsprozesses von Blut erhalten wird. In diesem ausgewählten Bereich wird überraschenderweise das Netz von aufgequollenem Fibrin gebildet, in denen die morphotischen Elemente und der Teil von flüssigem Blut enthalten sind. Falls man dem Blut ein Verdünnungsmittel zugibt, kommt es zu dem analogen Effekt mit dem Unterschied, daß im Bereich des aufgequollenden Fibrinnetzes zusätzlich dieses Verdünnungsmittel enthalten ist. Sowohl bei der Anwendung von reinem Blut als auch mit den Verdünnungsmitteln hat das Rohprodukt, das mit dem Verfahren nach der Erfindung dargestellt wird, die Form, die einer harten Gallerte mit lebendigroter Farbe gleicht, wobei der Effekt von Retraktion ausbleibt und ein Rohprodukt von dem vollen Volumen der Komponentensumme gewonnen wird. Das Rohprodukt wird in Stücke geteilt, deren Dicke 40 mm nicht überschreitet, und in Wasser bei einer Temperatur von 353 K während 40 Minuten pasteurisiert. Nach völliger Salzauflösung werden vom Gefäß 7,5 I Blut abgenommen, welchem man beliebige Vitamine, die in Wasser auflösbar sind, in einer Menge von 2 g zugibt; man gibt weiterhin frisch aus den Gefäßen entferntes Schweineblut in einer Menge von 92,5 I zu. Das Ganze wird für 90 Minuten stehengelassen. Nach Zerschneiden in Stücke wird das Rohprodukt einem Pasteurisationsprozeß bei einer Temperatur von 353 bis 363 K während 30 bis 40 Minuten unterzogen. Nach der Auflösung von Kochsalz im Blut werden 5 I Fleischbrühe zugegossen. In das gewonnene Gemisch werden 50 g Schweinegalle eingeführt. Das Ganze wird bis 90 Minuten zur Produktdarstellung stehengelassen. Danach wird das gewonnene Produkt in Stücke von 100 bis 150 g geschnitten und einer thermischen Verarbeitung bei einer Temperatur von 403 K während 3 Minuten im Ölbad unterzogen. Das auf diese Art gewonnene Produkt schmeckt ähnlich wie Tierleber und wirkt appetitanregend.Example IV. In an empty vessel with a volume of 15 I, 80 g of sodium chloride are poured.
