Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von Fett in Wasser- Emulsionen, vorzugsweise von Mayonnaise und mayonnaiseaehnlichen Zubereitungen. Vorteile der Zubereitungen sind hohe physikalische Stabilitaet sowie Variabilitaet in den Gebrauchseigenschaften und ernaehrungsphysiologische Hochwertigkeit. Erfindungsgemaess werden zur Herstellung stabiler Fett in Wasser- Emulsionen als Stabilisatoren chemisch modifizierte Vicia- faba- Proteine oder Proteinisolate,vorzugsweise Acylierungsprodukte,gegebenenfalls in Kombination mit an sich bekannten Coemulgatoren und/oder Dickungsmitteln eingesetzt.Der Acylierungsgrad bzw.
