Abstract
La presente invención se relaciona con la industria de los alimentos. Se describe un proceso para la elaboración de harina de trigo integral de baja coloración que incluye las etapas de: (a) proporcionar granos de trigo acondicionado; (b) fraccionar el grano de trigo a temperatura y presión ambiental; (c) separar las corrientes de endospermo, salvado y germen; (d) moler la corriente de endospermo obtenido en la etapa (c) hasta un tamano de partícula entre 150 a 180 micras; (e) someter la corriente de germen obtenida en la etapa c) a un tratamiento térmico; (f) tratar la corriente de salvado y germen; y g) mezclar el endospermo, el germen y el salvado de manera medible y controlada para obtener una harina de trigo entero de baja coloración blanca que consiste de 80.0+- 2 % de endospermo, 17.5 +-2 % de salvado y 2.5 +- germen.
