Abstract

Esta invención se relaciona con el proceso de producción de azúcar de cana y con ella se persigue la inhibición del deterioro de los productos de esta industria. El procedimiento producto de nuestra invención se caracteriza por inhibir el deterioro de la meladura y el de los productos obtenidos a partir de esta, debido a la eliminación de un alto % de grupos aminicos ( aminoácidos) y el incremento de la concentración de ácidos orgánicos de la meladura. Lo anterior conlleva a una tendencia posterior a la estabilización del ph de estos productos en las cercanías de la neutralidad (6-7) y por ende a un aumento de sus estabilidades. Este efecto es conseguido con el calentamiento en medio alcalino de las meladuras a un ph constante y por un tiempo determinado. Esta invención puede ser aplicada durante el proceso de fabricación del azúcar crudo de cana para lograr mayores estabilidades durante el almacenamiento de los azúcares y mieles.This invention is related to the production process of cane sugar and with it the inhibition of the deterioration of the products of this industry is pursued.
