Abstract
Riešenie sa týká sposobu tepelného ošetrenia mliekárenských výrobkov s predíženou tirva-nlivosťou. Podstata spočívá v tom, že do jogurtu, kyslej smotany sa zamieša 0,1 až 0,5 % hmot. karboxymetylcelulózy, vzniknutá zmes je zahiriata na teplotu 60 až 75 °C po dobu 3 sekúnd až 10 minút, ďalej je ochladená na teplotu 50 až 60 °C a do nej sa zamieša 0,1 až 2 °/o hmot. jedlej želatiny.
