Abstract
La presente invención se refiere a un método para preparar una bebida de levadura fermentada, dicho método que comprende las etapas de: a. Fermentar el mosto con una levadura biológicamente activa para producir un líquido fermentado; b. Opcionalmente, remover la levadura del líquido fermentado; c. Mezclar el líquido fermentado con partículas de polivinilpolipirrolidona (PVPP); d. Filtrar el líquido fermentado que contiene las partículas de PVPP sobre un primer filtro de membrana sin emplear un auxiliar de filtro; e. Combinar la primera fracción retenida con el líquido acuoso de regeneración para desabsorber los polifenoles y/o la proteína de las partículas PVPP, dicho liquido acuoso de regeneración tiene un pH de al menos 10.0; f. Filtrar la combinación de la primer fracción retenida y el líquido de regeneración sobre un segundo filtro membrana sin emplear un auxiliar de filtro; y g. Después de una refinación adicional opcional de partículas de PVPP regeneradas contenidas en la segunda fracción retenida, recircular las partículas de PVPP regeneradas a la etapa c; en donde los componentes macromoleculares contenidos en la primer fracción retenida de la etapa d y/o retenidos en el segundo filtro de la etapa f, son degradados utilizando un agente degradante capaz de degradar proteínas y/o polifenoles, dicho agente degradante es seleccionado de oxidantes, enzimas y combinaciones de los mismos. El método de acuerdo a la presente invención puede ser realizado con una PVPP de uso único así como también PVPP regenerable. Además, el método es muy robusto y no necesita de equipo de filtros sofisticados y espaciosos para regenerar la PVPP.
